Job Requirements

  • minimum 3 years leadership experience in a luxury, high volume hotel
  • physical ability to stand and walk throughout shift
  • frequent lifting and carrying up to 50 lbs
  • occasional kneeling, pushing, pulling
  • occasional ascending or descending ladders, stairs and ramps

Job Qualifications

  • previous leadership experience in pastry production
  • strong knowledge of sugar work, chocolate, doughs and laminated doughs skills an asset
  • computer literate with Microsoft Windows applications an asset
  • strong interpersonal and problem-solving abilities
  • ability to work well under pressure in a fast-paced environment
  • ability to work cohesively as part of a team
  • ability to focus on guest needs while remaining calm and courteous

Job Duties

  • understand the importance and demonstrate a commitment to our 'Our Culinary Culture'
  • as sous chef, lead and supervise the pastry team including delegating, prioritizing and assigning duties
  • supervise production and execution of service with executive pastry chef and assistant executive pastry chef
  • maintain motivation and a cohesive team environment
  • ensure all pastry items meet quality standards and recipes
  • communicate and enforce EHC and Servesafe standards including temperature logs
  • maintain cleanliness and rotate products to reduce waste
  • report tardiness and unsafe work practices
  • operate all pastry stations seven days a week and prepare colleagues for absences
  • share ideas in shift briefings
  • liaise with outlet chefs on guest feedback
  • improve food preparation and presentation
  • follow sustainability procedures for recycling and compost
  • coordinate production for banquet and restaurant functions
  • conduct daily briefings in absence of senior pastry chefs
  • assist in new product development
  • manage payroll costs and productivity
  • provide training for new pastry colleagues
  • perform other duties as assigned
