Job Requirements

  • High school diploma required
  • entry level position after culinary school graduation
  • minimum of 1 year's experience in hotel or pastry shop with a good working knowledge of fundamentals of pastry and baking and accepted standards of sanitation

Job Qualifications

  • Basic knowledge of mixing techniques, recipe preparation, piping, cake building, decorating
  • basic knowledge of mousses, custards and sauces
  • ability to work under pressure and handle multiple tasks and difficult situations
  • knowledge of operating all kitchen and pastry equipment including mixers, tilt skillets, ice cream machine
  • basic mathematical skills
  • must be able to obtain Food Handler's Card
  • ability to bend, stoop, stand, lift 50 pounds and push carts weighing up to 200 pounds
  • ability to speak, read and write English
  • ability to work a flexible schedule including weekends and holidays

Job Duties

  • Reports directly to the Pastry Chef and Sous Chef
  • report to Cook II and Cook I if any above is absent
  • prepares all volume food items according to standard recipes and specifications to ensure consistency of product
  • adheres to control procedures for cost and quality
  • checks and controls proper storage and rotation of product, checking on portion control to maintain quality
  • practices inventory controls including preparation and pick up of items from storeroom
  • stores all food in refrigerated boxes with covers, labels and dates
  • cleans walk-ins and reach-in boxes to ensure all equipment in working areas is clean, sanitary and in proper working condition in compliance with health department regulations
  • maintains area in a clean condition at all times
  • works varying schedules reflecting business needs of the hotel
  • performs all other assigned duties
