The Pastry Cook II role at Hotel Drover is a vital position within the culinary team, responsible for the preparation, baking, and finishing of high-quality pastries, desserts, and baked goods that align with both Hotel Drover's standards and the offerings of 97 West Kitchen + Bar. The individual in this position supports daily pastry production, ensures each product meets consistent quality and presentation requirements, and helps maintain a clean, safe, and organized kitchen environment. Collaboration with the Pastry Chef and Culinary leadership is key to providing an exceptional guest experience. This role is perfect for someone who is passionate about baking, takes pride in their craft, and wishes to contribute to an extraordinary guest experience that reflects the heart and soul of the Fort Worth Stockyards. Job Requirements

  • High school diploma or equivalent
  • Previous experience working in a pastry or baking role preferred
  • Ability to stand, walk, and move for extended periods
  • Must be able to lift, carry, and move up to 50 lbs regularly
  • Ability to work on uneven, slippery, or sloped surfaces
  • Ability to reach overhead and below the knees, including bending, twisting, and stooping
  • Comfortable working in hot/cold environments (e.g., kitchen, walk-ins)
  • Ability to work in a fast-paced, high-volume kitchen environment
  • Ability to communicate clearly, professionally, and respectfully
  • Flexible schedule including availability to work evenings, weekends, and holidays
  • Strong interpersonal and collaboration skills
  • Ability to follow recipes, instructions, and standardized procedures accurately

Job Duties

  • Prepare and bake pastries, desserts, breads, and specialty items following established recipes and quality standards
  • Accurately measure, portion, and prepare ingredients needed for daily production
  • Set up and break down assigned pastry station, ensuring proper organization, labeling, and cleanliness
  • Monitor food quality, taste, texture, and consistency throughout the shift
  • Follow food preparation checklists to ensure readiness for service and banquet production
  • Follow all food safety and personal hygiene procedures in accordance with health regulations and hotel standards
  • Ensure proper handling, storage, labeling, and rotation of ingredients (FIFO)
  • Clean, sanitize, and maintain pastry work areas, tools, mixers, and equipment throughout the shift
  • Check the temperature and functionality of pastry equipment and appliances
  • report concerns to management

  • Assist with special events, banquet functions, VIP amenities, and seasonal offerings as directed
