We are seeking a passionate and skilled Pastry Cook II to join our dedicated culinary team at Hotel Drover. This role is crucial in upholding the hotel’s commitment to delivering Legendary Service to every guest each day. The Pastry Cook II will be responsible for preparing, baking, and finishing a variety of high-quality pastries, desserts, breads, and specialty baked goods that reflect the high standards of Hotel Drover and its on-site dining venue, 97 West Kitchen + Bar. This position demands attention to detail, culinary expertise, and a strong commitment to maintaining cleanliness, safety, and organization within the pastry kitchen. Job Requirements
- High school diploma or equivalent
- Able to stand, walk, and move for extended periods
- Ability to lift, carry, and move up to 50 lbs regularly
- Able to work on uneven, slippery, or sloped surfaces
- Ability to reach overhead and below knees including bending, twisting, and stooping
- Comfortable working in hot and cold environments such as kitchens and walk-ins
- Ability to work in a fast-paced, high-volume kitchen environment

- Basic knowledge of pastry fundamentals, baking techniques, and ingredient handling
Job Duties
- Prepare and bake pastries, desserts, breads, and specialty items following established recipes and quality standards
- Accurately measure, portion, and prepare ingredients needed for daily production
- Set up and break down assigned pastry station, ensuring proper organization, labeling, and cleanliness
- Monitor food quality, taste, texture, and consistency throughout the shift
- Follow food preparation checklists to ensure readiness for service and banquet production
- Follow all food safety and personal hygiene procedures in accordance with health regulations and hotel standards
- Ensure proper handling, storage, labeling, and rotation of ingredients (FIFO)
- Clean, sanitize, and maintain pastry work areas, tools, mixers, and equipment throughout the shift
- Check the temperature and functionality of pastry equipment and appliances
- report concerns to management
- Communicate clearly and professionally with team members and leaders
- Assist with special events, banquet functions, VIP amenities, and seasonal offerings as directed
- Perform all other duties as assigned
