The position available at The Ritz-Carlton St. Louis is for a full-time Baker within the Food and Beverage & Culinary category. This non-management role is instrumental in contributing to the culinary excellence that defines the hotel’s dining experience. Bakers at The Ritz-Carlton are responsible for preparing a wide array of baked goods, including breads and pastries, through a detailed process that encompasses mixing doughs, proofing, baking, and decorating these items to perfection.

In this role, the baker will review production sheets daily to understand and meet the variety of baked goods required and ensure that all items are prepared following precise recipes, quality, and presentation standards. The position involves critical food safety practices, such as maintaining kitchen logs, monitoring food and appliance temperatures, and adhering strictly to hygiene protocols. Job Requirements

  • Technical trade or vocational school degree
  • Minimum 2 years of baking or culinary related experience
  • Knowledge of proper food handling and safety standards
  • Ability to stand and move for long periods
  • Ability to lift and move objects weighing up to 25 pounds
  • Strong interpersonal skills
  • Willingness to comply with company policies and procedures

Job Duties

  • Prepare breads and pastries including doughs and fillings proofing baking and decorating as appropriate
  • Review production sheet to understand variety of baked goods to be produced daily
  • Prepare and cook food according to recipes quality and presentation standards and food prep checklists
  • Maintain kitchen logs for food safety program compliance
  • Keep chef informed of excess food items for planning of daily specials
  • Safely and appropriately use baking and measuring tools equipment appliances to prepare baked foods
  • Follow and ensure compliance with food safety handling policies and procedures including personal hygiene procedures
