Job Requirements

  • stand and/or walk for an entire shift
  • safely transport items on slick and uneven surfaces and use stairs where applicable
  • safely move through all restaurant areas

  • perform duties in limited physical space with variable ventilation, smoke, and extreme temperatures

Job Qualifications

  • minimum of 1-year pastry chef experience in a full service restaurant or equivalent
  • strong knowledge of pastry preparation techniques and food safety standards

Job Duties

  • perform a daily walk through inventory to prioritize product utilization
  • identify and communicate inventory and equipment needs to ordering manager
  • meet daily with executive chef to coordinate and ensure production standards
  • assist in development and maintenance of pastry recipe books detailing ingredients, product specifications, and portion sizes
  • assist in development of dessert menus and items
  • produce pastries for restaurant and special functions
  • prepare ingredients needed for pastry recipes
  • prepare pastry items according to prescribed recipes
  • maintain food quality standards including consistency and presentation
  • coordinate proper food storage according to operating procedures
  • work dessert station on line when necessary
  • use equipment as prescribed in preparation of menu items
  • safely and efficiently use knives and utensils necessary for menu preparation
  • operate functions of position independently if needed
  • maintain a clean and orderly work area to ensure safety
  • communicate problems to management immediately
  • review catering function agenda daily
  • confirm guest reservations with management to determine preparation quantities
  • maintain a well-manicured appearance reflecting restaurant image
  • be an active team player
  • follow supervisor's instructions
  • work under stressful conditions and make appropriate judgment calls
  • assist servers in presenting pastry items
  • maintain cleanliness throughout shifts and prepare for next shift
  • follow proper hand washing procedures
  • communicate with director of purchasing when ordering items not in weekly product report
  • review and update pastry item descriptions for service staff
