The role offered is an essential position tailored for Culinary Institute of America students completing their pastry externship. As a pastry cook, the individual will be responsible for preparing high-quality pastry and dessert items across various outlets and banquets, strictly adhering to production requirements and quality standards. Safety and sanitation are paramount to this role, ensuring compliance with established policies and maintaining a hygienic kitchen environment. Candidates should expect to handle tasks such as station setup, ingredient preparation, and operation of specialized kitchen equipment including ovens, mixers, dough sheeters, and ice cream machines. The role offers an hourly wage of $24.07 and includes complimentary employee meals and participation in 401(k) retirement plans, highlighting Four Seasons' commitment to supporting its team members' well-being and future security.

This full-time, temporary position spans 14 weeks or 550 hours from May to August, requiring flexibility to work early morning, midday, and evening shifts in order to support the resort's 24/7 operational needs. It is a highly collaborative environment where teamwork, professionalism, and adherence to policies such as meal breaks and payroll procedures are essential. Since this position is specifically for CIA externs, a minimum of one year of culinary or pastry experience is expected along with a foundational knowledge of culinary techniques acquired through education or on-the-job training. Candidates must possess valid US work authorization as Four Seasons does not offer work sponsorship or visa support for this role.

Job Duties

  • Prepare consistent quality food and pastry items following recipe cards and production, portion, and presentation standards
  • Complete mis en place and set-up station for breakfast, lunch, and/or dinner service
  • Start food items that are prepared ahead of time, making sure not to prepare beyond estimated needs
  • Operate, maintain and properly clean kitchen equipment, including but not limited to stove, steamer, food processor, mixer, oven, ice cream machine, dough sheeter, walk in cooler & freezer
  • Date all food containers and rotate as per policies, making sure that all perishables are kept at proper temperatures
  • Return all food items not used to designated storage areas, being sure to cover/date all perishables
  • Follow all established actions for food cost control food waste, loss and usage per policies
