The Bartolotta Restaurants is a renowned family-run restaurant and catering organization located in the Greater Milwaukee area. The position available is for a full-time Pastry Chef role within the Bartolotta Restaurants team. This role offers the opportunity to work alongside world-class culinary mentors who offer hands-on training and professional growth prospects. The Pastry Chef will play a pivotal role in the daily operations of the pastry department, which includes planning, managing, and executing pastry preparation and presentation to produce delectable desserts that impress all guests. The role involves overseeing employee development within the department, ensuring efficient financial management concerning food costs, purchasing, and inventory control. Candidates will be responsible for creating, implementing, and managing the pastry menu, ensuring it meets quality standards and reflects the company’s high culinary standards. The Pastry Chef will also have the opportunity to interact with vendors, negotiate purchasing terms, and maintain relationships to secure the best quality products at advantageous prices. Communication and collaboration with the General Manager and Executive Chef are essential aspects of the role to maintain seamless operations and culinary excellence. Additionally, the role requires vigilance in adhering to nutrition, sanitation, and safety regulations within the pastry department. Maintaining accurate recipe documentation, inventory data, and production reports will be a regular expectation. The Pastry Chef will also conduct daily line checks and coach personnel to deliver services that meet or exceed the company’s quality standards. The position involves coordinating with front-of-house and back-of-house staff to educate them on new recipes and menu innovations, ensuring seamless delivery and guest satisfaction. Job Requirements

  • High school diploma or equivalent
  • Previous experience in pastry or baking preferred
  • Ability to stand for extended periods
  • Ability to lift up to 15 pounds
  • Availability to work flexible hours including early mornings, evenings, weekends, and holidays
  • Strong communication skills
  • Commitment to uphold sanitation and safety standards
  • Ability to work collaboratively within a team environment

Job Duties

  • Planning and directing food preparation
  • Manage food costs and control purchasing and inventory
  • Modify menus or create new ones for effectiveness and that meet quality standards
  • Manage pastry department staff's activities and daily responsibilities
  • Interact with external vendors to obtain the best quality in pricing and products
  • Work closely with General Manager and Executive Chef
  • Comply with nutrition and sanitation regulations and safety standards
  • Maintain current and accurate recipes, reports and inventory related data
  • Conduct daily pastry line checks
  • Manage and coach personnel in an effective manner that meets quality service
  • Educate the FOH and BOH staff about new recipes and menu items
  • Meet with clients to detail cake and pastry orders for special events
