The Four Seasons Napa Valley is currently seeking an experienced and talented Chef de Partie (Supervisor) to join its esteemed Pastry team. Reporting to the Executive Pastry Chef, this role plays a crucial part in supporting operations across various food and beverage outlets including Truss Restaurant & Bar, Banquets, In-Room Dining, and Campo F&B outlets. The position offers a $1,000 signing bonus for external candidates, emphasizing the company's commitment to attracting top culinary talent.

As a Chef de Partie, you will be responsible for preparing all meals and baked goods according to production requirements and rigorous quality standards while maintaining a clean and safe work environment. Your leadership will extend to planning, organizing, controlling, and directing the work of pastry department employees, ensuring consistency in production and guest satisfaction. This dynamic role involves close collaboration with both pastry and food and beverage leadership teams to maintain the highest culinary standards.

Key responsibilities include supervising and assisting with the creation and production of all pastry items, managing daily kitchen activities, completing mise en place, and setting up stations for all outlets. You will be expected to manage procurement and ordering processes with precision and accuracy, train and motivate pastry staff, and contribute creatively to menu development and recipe creation. Ensuring compliance with all sanitation standards as well as company policies and procedures is an essential part of this role.

To excel in this position, candidates should possess a college degree preferably in hotel/restaurant management or culinary arts, or equivalent experience. A minimum of two years’ pastry or baking experience in a similar luxury hospitality environment is required. Proficiency in custom and wedding cake assembly, chocolate work, lamination, and bread making will be an advantage. Strong interpersonal and communication skills, flexibility with scheduling, attention to detail, and the ability to multitask under pressure are pivotal for success. You will also be expected to operate and maintain kitchen equipment, demonstrate proficient piping and knife skills, and have computer literacy related to food and beverage systems.

Job Duties

  • work closely with the pastry chef to supervise and assist with the creation and production of all pastry items following recipes and presentation standards
  • manage daily kitchen activities including overseeing staff aiding with menu preparation ensuring food quality freshness and cost and monitoring ordering and stocking
  • complete mise en place and set up stations buffets and plate up for all outlets
  • ensure consistent production of all baked goods and pastries ice cream and confectionery for all outlets banquets and amenities
  • manage procurement and ordering processes for the department through Birchstreet ensuring accuracy vendor consistency and adherence to purchasing specifications
  • train evaluate coach motivate and supervise other pastry employees to ensure that core standards are met
  • organize and assist with restaurant events buyouts outside catering holiday activations
