Job Requirements

  • Formal culinary or baking and pastry education preferred
  • At least 2 years of experience in culinary roles on passenger ships preferred
  • Demonstrated ability to manage time effectively and prioritize tasks
  • Strong interpersonal skills for teamwork
  • Experience in coaching or supervising others preferred
  • Possession of valid US Passport or Permanent Resident status
  • Completion of STCW Basic Safety Training
  • Completion of STCW Crowd Management certification
  • Possession of USCG Medical Certificate
  • Completion of STCW Maritime Security Awareness training
  • Current First Aid and CPR certifications
  • Holding a Transportation Worker Identification Credential (TWIC)
  • Ability to pass drug screening and medical examinations
  • Compliance with company safety and sanitation procedures

Job Qualifications

  • Completion of formal culinary or baking and pastry training preferred
  • Minimum of 2 years' culinary experience on board passenger ships preferred
  • Strong time management skills
  • Ability to handle multiple tasks, set priorities, and meet deadlines
  • Ability to work collaboratively and support a team environment
  • Experience training or guiding others and reviewing their work
  • Valid US Passport or US Permanent Resident Card with valid passport
  • STCW Basic Safety Training certification
  • STCW Crowd Management certification
  • USCG Medical Certificate
  • STCW Maritime Security Awareness certification
  • Current First Aid/CPR certification
  • TWIC card

Job Duties

  • Participates in the actual baking of guest breakfast, lunch, and dinner breads (both sweet and savory), as well as spreads, jams, and butters
  • Prepares and plates guest dinner and lunch desserts including mise en place, sauce, and garnish
  • Prepares mid-morning and high tea pastries and baked goods and 'welcome' baked goods
  • Produces baked goods and desserts catering to dietary restrictions such as gluten-free, vegan, kosher, and lactose-free
  • Assists in production of crew meals as needed
  • Works with Head Chef on inventory management and baking/pastry orders
  • Maintains all baking and pastry area sanitation including equipment and surfaces
  • Observes proper FIFO procedures for baking and pastry pantry
  • Organizes walk-in cooler and freezer storage areas
  • Adheres to CDC Vessel Sanitation Program and Health Canada requirements
  • Participates in onboard safety training, drills, and complies with company safety policies
  • Assists in dishwashing and cleaning as assigned
  • Aids in loading, handling, and proper storage of food items to maintain inventory and ensure proper rotation
