The role of Pastry Chef at The Bartolotta Restaurants is a vital position responsible for ensuring the successful daily production and presentation of all pastry offerings. This position requires close collaboration with both the Executive Chef and the Corporate Executive Chef to create, implement, and manage an innovative pastry menu that aligns with the company’s high standards of quality and service. The Pastry Chef will oversee employee development within the pastry team and maintain strict compliance with nutrition, sanitation, and safety standards. Duties include maintaining accurate and updated recipes, conducting daily pastry line checks, managing personnel effectively to uphold quality service, educating both front-of-house and back-of-house staff about new menu items, and reporting daily ordering needs. Additionally, the Pastry Chef will play a hands-on role throughout the kitchen to support overall operations, conducting reviews, and coaching pastry cooks to foster growth and improve performance.

- Certified in food service sanitation as mandated by the state of Wisconsin
- Ability to work efficiently and quickly
- Must be able to work well as part of a team
- Must be able to work well under pressure
- Understanding of or ability to learn basic sanitation and regulations for workplace safety
- Ability to maintain personal cleanliness

Job Duties
- Help Exec Chef create new menus ones for effectiveness and that meet quality standards
- Work closely with Executive Chef and Corporate Executive Chef
- Comply with nutrition and sanitation regulations and safety standards
- Maintain current and accurate recipes
- Conduct daily pastry line checks at location working that day
- Work with Chefs to Manage personnel in an effective manner that meets quality service
- Help Chefs Educate the FOH and BOH staff about new recipes and menu items
- Report Daily Ordering needs to Chefs
- Help with other duties throughout the Kitchen
- Preform Reviews and coaching to pastry cooks
