The Pastry Chef position at American Cruise Lines is a coveted role that requires a high level of culinary expertise in desserts and baked goods, including confectionary creations. This role is integral to the kitchen team, demanding creativity, precision, and a strong understanding of flavor combinations and aesthetic presentation. The Pastry Chef will be responsible for preparing a wide variety of pastries, breads, cookies, and desserts daily according to a structured menu matrix overseen by the Executive Chef. Creativity and innovation are encouraged, as the role involves researching and testing new recipes to continuously enhance the guest and crew dining experience.

Working on board the ship offers a unique environment with comfortable living quarters and a professional galley equipped to support high culinary standards. The role requires the Pastry Chef to maintain high food safety and FDA standards, ensure quality control in baked goods by taste-testing products, and manage inventory and production schedules effectively. The position offers a competitive daily rate compensation and benefits including health, dental, vision insurance, and a 401(k) plan with employer match. American Cruise Lines also covers expenses for travel, room and board, uniforms, and training. This full-time exempt position operates on a 7-day workweek while onboard, with 6-8 weeks of work followed by 2 weeks of unpaid vacation.

Given the shipboard setting, the Pastry Chef must be adaptable, able to work under pressure, and possess the physical ability to handle the motion of the ship, long work hours, and the demands of the role, such as frequent lifting, standing for long periods, and navigating stairs and confined spaces. Job Requirements

  • Associate's degree or equivalent culinary arts education
  • 3-5 years of relevant professional pastry chef experience
  • Basic knowledge of baking and pastry techniques
  • Understanding of food and beverage standards
  • Ability to pass pre-employment drug test
  • Ability to pass criminal background check
  • TWIC certification
  • Physical capability to work under ship motion conditions
  • Ability to work long shifts and adapt to changing conditions
  • Ability to stand for extended periods
  • Ability to lift frequently up to 20 lbs and occasionally up to 50 lbs
  • Willingness to live and work onboard for extended periods

Job Qualifications

  • An associate's degree in culinary arts or pastry & baking, and/or 3-5 years of experience with an emphasis on quality production
  • Basic understanding of professional baking and pastries and food & beverage knowledge
  • Problem solving skills, organization skills, and self-motivation
  • Commitment to quality service
  • Must be able to pass a pre-employment drug test
  • Must complete a criminal background check
  • Transportation worker identification credential (TWIC)
  • Ability to perform the essential functions of the job with or without accommodation

Job Duties

  • Oversee creativity and prepare all desserts, bread, pastries, cookies, etc. required for vessel each day
  • Prepare and serve items in accordance with established procedures, recipes, portion size, and presentation standards
  • Set-up, maintain, and break down station according to FDA standards
  • Taste all products produced to assess quality
  • Notify the Executive Chef of any product shortages or equipment maintenance issues
  • Maintain accurate counts on all food items prepared to prevent discrepancies between amount of food needed and food prepared
  • Schedule the production of all baked goods
  • Always maintain an inventory of fresh baked goods
  • Use food production equipment according to manufacturer's instructions
  • Maintain a professional appearance at all times
  • Ensure that each guest has a positive and memorable experience
