The Pastry Chef role is a full-time, exempt position requiring commitment and culinary skill on board the ship for 6-8 weeks during the season, with work scheduled seven days per week aboard the vessel and two weeks of unpaid vacation between tours.
The Pastry Chef at American Cruise Lines plays a pivotal role in creating and maintaining the high standards of culinary excellence expected on board. This position demands mastery over a wide variety of desserts, baked goods, and confectionary items, along with a deep understanding of flavor pairings and visual presentations. The chef is responsible for adhering to a detailed daily menu matrix, preparing desserts, breads, pastries, and other related items with creativity and precision. Each product prepared must be tasted and assessed to ensure food quality meets established standards. The Pastry Chef collaborates closely with the Executive Chef and supports daily operations by managing inventory, scheduling production, and maintaining cleanliness and organization at their workstation. Creativity is encouraged through continuous research and testing of innovative dessert recipes to provide exceptional dining experiences for guests and crew alike. Beyond culinary skills, the role requires adaptability to shipboard life, including the ability to perform in an environment subject to ship motions such as surge, sway, and pitch. The chef must be physically capable of standing long hours, lifting ingredients and equipment, and performing emergency procedures if needed. Job Requirements
- Associate's degree in culinary arts or pastry & baking or equivalent experience
- 3-5 years of experience in pastry or baking with emphasis on quality production
- Ability to live and work on board a vessel for extended periods
- Ability to stand for entire shifts and lift up to 50 lbs
- Must be able to pass a pre-employment drug test
- Must complete a criminal background check
- Transportation Worker Identification Credential (TWIC)
- Ability to perform physical tasks such as climbing ladders and working in ship motion environment
- Willingness to work 7 days per week during onboard schedule
Job Qualifications
- An Associate's degree in Culinary Arts or pastry & baking, and/or 3-5 years of experience with an emphasis on quality production
- Basic understanding of professional baking and pastries and food & beverage knowledge
- Problem solving skills, organization skills, and self-motivation
- Commitment to quality service
- Must be able to pass a pre-employment drug test
- Must complete a criminal background check
- Transportation Worker Identification Credential (TWIC)
- Ability to perform the essential functions of the job with or without accommodation
Job Duties
- Oversee creativity and prepare all desserts, bread, pastries, cookies, etc. required for vessel each day
- Prepare and serve items in accordance with established procedures, recipes, portion size, and presentation standards
- Set-up, maintain, and breaks down station according to FDA standards
- Taste all products produced to assess quality
- Notify the Executive Chef of any product shortages or equipment maintenance issues
- Maintain accurate counts on all food items prepared to prevent discrepancies between amount of food needed and food prepared
- Schedule the production of all baked goods
