The role offered at Gozzer Ranch is a critical position within their culinary team—specifically within the Pastry Department. The ideal candidate will be a seasoned Pastry Chef who leads by example, setting exemplary culinary standards and fostering a culture of continuous improvement. This leadership role requires hands-on supervision of daily pastry operations, including procurement of ingredients, quality control, and strict adherence to sanitation and safety standards. The Pastry Chef will work closely with executive culinary staff to innovate and implement new menu ideas inspired by seasonal and local ingredients, maintaining the highest standards of taste, presentation, and portion control.

This position demands exceptional management skills to organize kitchen operations efficiently to handle daily restaurant demands. The candidate will also be responsible for inventory monitoring, waste minimization, equipment maintenance, and ensuring compliance with all government safety and health regulations. Job Requirements

  • Must be able to work flexible work hours/schedule including evenings, weekends, and holidays
  • Positive attitude, professional demeanor, and exceptional communication and interpersonal skills
  • Ability to work in a team environment
  • Ability to stay calm and focused during busy times
  • Ability to work flexible schedules including shifts greater than eight hours
  • Ability to read, write, speak, and understand English
  • Additional languages preferred
  • Ability to meet physical demands including standing, walking, moving for over eight hours, and lifting items up to fifty pounds

Job Qualifications

  • Culinary degree and pedigree preferred
  • Proven experience and expertise in pastry and desserts
  • Minimum of four to five years’ experience in large world class resorts, hotels, and clubs
  • Experience sourcing local ingredients and creating menu items based upon seasonal ingredients

Job Duties

  • Work with all culinary and F&B leaders to create exemplary culinary standards and an environment of continual improvement
  • Lead by example in the Pastry department and anticipate business levels
  • Supervise daily procurement of specific pastry ingredients
  • Ensure continual product quality control and procedures are maintained on a daily basis
  • Minimize spoilage, waste, and over production with consistent procedures
  • Ensure all cleaning schedules, temperature records, opening/closing checklists are completed and recorded daily
  • Continuously create and implement new menu ideas with the Executive Chef
  • Organize the kitchen and preparations in an efficient manner to cope with the daily restaurant covers
  • Monitor inventory levels through regular inventory checks
  • Maintain all equipment and ensure it is properly handled and maintained by all culinary staff
  • Be responsible for the quality of all pastry items prepared in the kitchen and ensure standard recipes are being followed consistently
  • Consistently check food for taste, temperature, and visual appeal
  • Ensure all dishes are uniform and portion sizes are adhered to as per Executive Chef specifications
  • Prevent the use of contaminated products in any food preparation phase
  • Ensure all government, safety, health, and security standards are complied with at all times
  • Perform any other duties as assigned
