Job Requirements
- 2 to 5 years of experience in a professional bakery or patisserie environment with a strong emphasis on laminated doughs
- Ability to work early morning shifts starting as early as 3 to 4 AM
- Passion for artisan baking and attention to detail
- Physical stamina to perform repetitive baking tasks
- Willingness to work weekends and weekdays
- Ability to follow health safety and sanitation standards

Job Duties
- We're seeking a passionate and skilled Pastry Baker with expertise in croissant making
- Prepare a variety of traditional and creative croissants daily from scratch, including plain, almond, chocolate, and seasonal varieties
- Manage all steps of laminated dough production: mixing, bulk fermentation, butter locking, folding, proofing, and baking
- Experiment with new croissant-based products (e.g., croissant sandwiches, savory filled croissants, cruffins) to keep the menu fresh and innovative
- Ensure consistency in texture, shape, and flavor of all viennoiserie items
- Maintain a clean, organized, and efficient baking environment in line with health and safety regulations
- Assist in sourcing and maintaining high-quality ingredients, including French-style butters and flours
- Work closely with ownership and baristas to align pastry offerings with the shop’s brand identity and customer base
- Monitor inventory levels and communicate supply needs proactively
- Potential to train and lead future pastry assistants or junior bakers as the business scales
