Reporting directly to the Executive Pastry Chef, the successful candidate will learn to execute daily operational duties, adhere to production guidelines, and master pastry recipes essential to the high-quality output of the resort’s bakery and food outlets. This position entails hands-on experience in the preparation, production, and inspection of various pastry and bakery items while maintaining strict compliance with local health department regulations and federal guidelines. The candidate will be responsible for inspecting ingredient freshness, proper food storage, and utilizing established recipes and procedures aligned with HACCP standards.
Beyond culinary skills, the role emphasizes cost management, including diligent monitoring of food costs, labor scheduling, and efforts to reduce overtime, ensuring efficient kitchen operations. Job Requirements
- High school diploma or equivalent
- prior experience in pastry or culinary setting preferred
- ability to work in physically demanding environment
- knowledge of local health department regulations
- adherence to HACCP food safety standards
- commitment to maintaining food cost and labor cost controls
- ability to supervise and mentor team members
- excellent communication and teamwork skills
Job Qualifications
- Culinary education or apprenticeship preferred but not mandatory
- proficiency in baking, chocolate work, and bread making
- knowledge of basic computer skills including Excel, Word, Outlook, and TM1
- familiarity with all cooking and preparation equipment
- strong knife skills
- experience with basic cooking techniques such as sautéing, broiling, frying, roasting, butchery, garde manger, pantry, and breakfast cookery
- excellent oral communication skills
- creativity and energy in the kitchen
- ability to maintain excellence in food production
Job Duties
- Learn and execute all daily operational duties related to pastry production
- follow production guidelines and pastry recipes precisely
- utilize all Food and Beverage WLW Standard Operating Procedures and comply with local health department and federal regulations
- inspect all foods received for freshness and proper specifications
- store raw foods and prepared items according to mandated procedures
- follow all use records, recipes and procedures in accordance with HACCP
- maintain food and labor cost controls including schedule management and overtime elimination
- assist in supervising the stewarding department and mentor staff for potential lateral or cook positions
- check freshness of foods and ingredients regularly
- ensure all recipes and portion use records are strictly followed
- monitor guest corporate feedback and strive for positive influence on rankings
- foster a cooperative and respectful work environment among coworkers
- mentor associates for career growth and advancement
