Job Requirements

  • High school diploma or equivalent
  • prior experience in pastry or culinary setting preferred
  • ability to work in physically demanding environment
  • knowledge of local health department regulations
  • adherence to HACCP food safety standards
  • commitment to maintaining food cost and labor cost controls
  • ability to supervise and mentor team members
  • excellent communication and teamwork skills

Job Qualifications

  • Culinary education or apprenticeship preferred but not mandatory
  • proficiency in baking, chocolate work, and bread making
  • knowledge of basic computer skills including Excel, Word, Outlook, and TM1
  • familiarity with all cooking and preparation equipment
  • strong knife skills
  • experience with basic cooking techniques such as sautéing, broiling, frying, roasting, butchery, garde manger, pantry, and breakfast cookery
  • excellent oral communication skills
  • creativity and energy in the kitchen
  • ability to maintain excellence in food production

Job Duties

  • Learn and execute all daily operational duties related to pastry production
  • follow production guidelines and pastry recipes precisely
  • utilize all Food and Beverage WLW Standard Operating Procedures and comply with local health department and federal regulations
  • inspect all foods received for freshness and proper specifications
  • store raw foods and prepared items according to mandated procedures
  • follow all use records, recipes and procedures in accordance with HACCP
  • maintain food and labor cost controls including schedule management and overtime elimination
  • assist in supervising the stewarding department and mentor staff for potential lateral or cook positions
  • check freshness of foods and ingredients regularly
  • ensure all recipes and portion use records are strictly followed
  • monitor guest corporate feedback and strive for positive influence on rankings
  • foster a cooperative and respectful work environment among coworkers
  • mentor associates for career growth and advancement
