The ranch is currently hiring for a front-line position in its culinary team, specifically within the pastry department. This role reports directly to the Executive Pastry Chef and focuses on learning and executing all daily operational duties related to pastry production. The position offers a comprehensive opportunity to develop skills in food preparation, adhere to production guidelines, and master pastry recipes while contributing positively to the overall guest experience at Brush Creek Ranch.

As part of this role, the successful candidate will engage in full daily preparation and production responsibilities within the bakery. They will also learn and implement all Food and Beverage Work Location Work SOP’s, local health department regulations, and federal guidelines, ensuring that every aspect of the kitchen operations meets the highest standards of safety and hygiene. Alongside the preparation tasks, the pastry team member will inspect all incoming food items for freshness and compliance with specifications, store raw and prepared foods properly, and maintain rigorous records of food usage, recipes, and procedures according to HACCP standards.

Cost management is a key aspect of this position. The individual will help maintain food costs, including managing high protein work sheets, labor costs, scheduling, and overtime control. This role also involves some supervisory responsibilities, particularly mentoring and helping stewarding department associates as they grow in their careers. Freshness checks, recipe adherence, and portion control are crucial duties to ensure consistent quality output in the bakery.

Job Duties

  • Learn and practice full job description and all job duties including daily preparation and production of bakery items
  • Utilize all food and beverage work location work standard operating procedures, local health regulations, and federal guidelines
  • Inspect all foods received for freshness and proper specifications
  • Store all raw foods and prepared items using mandated procedures
  • Follow all use records, recipes, and procedures for food preparation in accordance with HACCP
  • Maintain costs especially food cost and labor cost, control schedule and eliminate overtime
  • Supervise and mentor stewarding department for career advancement
  • Check freshness of foods and ingredients and ensure recipe and portion control
  • Monitor guest corporate feedback scores and work towards positive influence
  • Foster cooperation and respect among coworkers
  • Mentor associates for career development and advancement
