The Front-Line Pastry Cook position at Brush Creek Ranch offers an exciting opportunity to join the culinary team under the guidance of the Executive Pastry Chef. This role is integral to the daily operations of the ranch's food and beverage department, particularly focused on the bakery and pastry segment. It provides hands-on experience in executing daily operational duties, mastering production guidelines, and preparing pastry recipes to the highest standard. Employees in this role are expected to engage fully in learning and practicing all aspects of the pastry kitchen’s operations, from food preparation to inventory management and adherence to food safety regulations.

This position is ideal for individuals who have a passion for baking and pastry arts and are eager to develop their skills within a supportive and professional kitchen environment. The role is more than just production; it also involves quality inspections, careful storage and handling of ingredients, and maintaining strict compliance with HACCP and other health and safety standards. Additionally, the Front-Line Pastry Cook collaborates closely with other departments, such as stewarding, to maintain a cohesive and efficient operation throughout the ranch.

Employees will have the opportunity to contribute to cost control efforts by monitoring food and labor costs meticulously, helping schedule staff effectively to reduce overtime, and ensuring resources are used efficiently. Another important aspect of the role is mentorship, as the cook will help train and guide team members from the stewarding department who may be looking to advance into cooking or other culinary positions.

The compensation for this role includes a competitive wage up to $17.00 per hour plus a guaranteed 10% end-of-season bonus, underscoring the ranch's commitment to rewarding hard work and excellence. The physical nature of the job involves about 75% physical activity, balanced with 25% cerebral tasks such as planning and quality control, providing a dynamic and engaging work environment. Job Requirements

  • high school diploma or equivalent

Job Qualifications

  • Culinary education or apprenticeship preferred but not mandatory
  • knowledge of baking, chocolate work, and bread making
  • proficiency in basic cooking techniques such as sautéing, broiling, frying, roasting, butchery, garde manger, pantry, breakfast cookery
  • basic computer skills including Excel, Word, Outlook, TM1
  • familiarity with cooking and preparation equipment
  • good knife skills
  • strong oral communication and teamwork abilities
  • creativity, energy, and commitment to excellence

Job Duties

  • Learn and execute all daily operational duties and pastry recipes
  • prepare daily bakery and food outlet items
  • utilize all F&B WLW SOP’s, local health department regulations, and federal guidelines
  • inspect all foods received for freshness and proper specifications
  • store raw foods and prepared items using mandated procedures
  • follow recipes, use records, and HACCP food prep procedures
  • maintain food and labor costs, manage scheduling and eliminate overtime
  • supervise and mentor stewarding department for potential lateral or cook positions
  • check freshness of foods and ingredients, ensure compliance with recipes and portion use
  • monitor guest corporate feedback scores and contribute to positive rankings
  • foster cooperation and respect among coworkers
  • mentor associates for career development and advancement
