The Pantry 1 role at Alohilani Resort Waikiki Beach centers on preparing cold food items for a variety of outlets within the resort, including multiple restaurants, room service, the employee cafeteria, and banquet events. This role requires adherence to standardized recipes while maintaining the highest culinary standards to ensure the presentation of appealing and appetizing products. The position also entails strict oversight of cleanliness, sanitation, and kitchen safety to safeguard health standards and operational efficiency. Efficiency is key, as the role demands minimizing waste and optimizing the cost-to-production ratio. The Pantry 1 is expected to demonstrate proficiency in cooking techniques such as charbroiling, poaching, deep-frying, sautéeing, braising, roasting, and par-cooking. They must possess keen discernment in selecting quality fresh produce, meats, and dairy products, as well as a strong understanding of the appropriate use of herbs and spices. This role further involves preparing food for banquets according to event specifications and supporting various kitchen positions as needed. A key aspect includes adherence to health department regulations and hotel standards in food storage, handling, and preparation. Maintaining a 'Clean As You Go' policy and the ability to operate and maintain kitchen equipment properly are also essential responsibilities. The Pantry 1 is integral to delivering a seamless culinary experience that supports the resort’s reputation for excellence, helping to create memorable moments for guests and team members alike.

Job Duties

  • Prepare all cold food items based on standardized recipes
  • Maintain cleanliness and organization of all storage areas
  • Complete necessary food and station preparation prior to restaurant opening

  • Work banquet food station as scheduled
  • Follow all health department and company regulations on food safety
  • Support other kitchen positions as needed
