The Executive Chef role at NOBU - Indian Wells is a pivotal leadership position responsible for overseeing all culinary functions within the restaurant. This position demands a dynamic and experienced culinary professional who embodies Desert Champions' commitment to excellence. As the culinary leader, the Executive Chef will be responsible for direct management of the kitchen team, including sous chefs and cooks, fostering an environment of inspiration, mentorship, and collaboration. This role requires exceptional communication skills and strong leadership to execute Nobu's cuisine to exacting standards, while maintaining high levels of food quality, safety, and consistency. The Executive Chef will also play a critical role in menu development, considering seasonal ingredients and customer preferences to deliver an unforgettable guest experience.

In addition to culinary excellence, this role carries substantial operational responsibility including staffing, scheduling, training, performance evaluations, and compliance with health and safety regulations. The Executive Chef will oversee all kitchen operations, balancing food and labor costs to achieve financial targets while ensuring profitability without compromising quality. They will collaborate closely with management to develop specials and function menus, always aligned with Nobu’s signature style and guest expectations.

The ideal candidate will have a minimum of five years of executive chef experience in a fine dining, high-volume environment and a minimum of three years in management roles. A culinary arts degree is preferred, accompanied by strong knowledge of Japanese and Peruvian cuisines, including sushi and sashimi. This role requires advanced knife skills, food and plate costing proficiency, and an ability to thrive under pressure. The Executive Chef must also hold essential certifications such as California Workplace Harassment and Workplace Violence Prevention certifications, and Riverside County Handlers certification.

Job Duties

  • Train, mentor and inspire the kitchen team through hands-on leadership
  • Handle staffing issues such as hiring, scheduling, attendance, and discipline
  • Conduct performance evaluations and offer appropriate coaching and guidance
  • Oversee all aspects of food preparation and execution, ensuring quality, consistency, and efficiency
  • Oversee prep work, cooking, and plating to ensure efficiency and quality
  • Ensure staff compliance with all health, safety, and sanitation standards
  • Maintain all required checklists, reports, and other documentation
  • Collaborate with management team to develop menus considering seasonal ingredients and customer preferences
  • Develop specials and function menus ensuring alignment with Nobu’s standards
  • Consistently ensure a strong focus on Nobu’s specific culinary standards, preparation, presentation, and taste
  • Oversee kitchen operations including inventory, ordering, and food and labor costs to meet financial targets
  • Foster a positive, respectful, and professional culture through effective communication
  • Track and prepare guest order tickets adhering to established ticket time standards
  • Attend mandatory meetings and trainings and maintain certifications
  • Provide relief to adhere to meal and rest breaks
  • Follow harassment and workplace violence prevention policies
  • Administer appropriate responses to emergencies for fire and life safety
  • Handle time and payroll approvals and other managerial functions
  • Perform other duties as assigned
