The Dinner Cook is responsible for preparing, seasoning, and cooking a variety of foods, including stocks, soups, sauces, meats, vegetables, and desserts. This role involves using diverse kitchen equipment and techniques such as baking, roasting, broiling, and steaming, ensuring food is cooked to exact standards. A keen eye for food quality, safety, and presentation is essential. The Specialty Cook position focuses on advanced culinary techniques like braising, baking, roasting (including on a rotating spit), and high-level skillet or sauté work. This role demands proficiency in operating all kitchen equipment and an understanding of production planning based on menus and inventory management. Specialty Cooks maintain exact food preparation standards, uphold food safety and sanitation practices in line with HACCP procedures, and exhibit advanced culinary skills. Collaboration between Dinner Cooks, Order/Grill Cooks, and guest interaction regarding menu items is also part of the Specialty Cook’s responsibilities.
Candidates must be at least 18 years old and have a passion for culinary arts and delighting guests with high-quality food. A minimum of two years of experience in a culinary setting with high-volume production is required unless the candidate holds a culinary education degree or equivalent experience with less time in the field. Applicants should have proficient knife skills, knowledge of culinary techniques and terminology, and the ability to read and understand recipes. Strong organizational skills and the ability to multitask efficiently in a fast-paced team environment are critical, along with speed, accuracy, and the capability to work well under pressure. Job Duties
- ensure food is cooked to proper standards
- clean kitchen equipment and practice all HACCP procedures
- prepare, season, and cook stocks, soups, sauces, meats, vegetables, desserts, and other foodstuffs for consumption in hotels and restaurants
- read menus to estimate food requirements and procure it from storage
- adjust thermostat controls to regulate temperature of ovens, broilers, grills, roasters, and steam kettles
- measure and mix ingredients according to recipes using various kitchen utensils and equipment
- bake, roast, broil, and steam meats, fish, vegetables, and other foods adding seasoning according to judgment
- observe and test food being cooked by tasting, smelling, and piercing with a fork
- use a variety of cooking techniques such as braising, baking, roasting, and high-level skillet/sauté work
- operate all kitchen equipment including adjusting thermostat controls to regulate temperature
- inventory product, read menus and estimate food requirements
- maintain standards and specifications related to food preparation and handling
- uphold food safety and sanitation guidelines including HACCP procedures
- demonstrate advanced culinary technical skills
- present and discuss menu item preparation with other cooks and guests
