Job Requirements
- Must have high school diploma or equivalent
- Must have degree from certified food service program or culinary school or equivalent experience
- Must have previous supervisory experience
- Must have minimum one year experience as banquet chef or similar role with 500+ cover counts in 4-star or 5-star establishment
- Must obtain and maintain valid licenses and certifications per Federal, State, and Gaming regulations
- Must pass background check
- Must pass drug screening
- Must be at least 21 years old
- Must pass ServeSafe certification
- Must understand pertinent federal, state, and local laws, codes, and regulations
- Must be knowledgeable of health, sanitation, and licensing ordinances
- Must understand food products, recipes, and preparation
- Must be proficient with computer applications
- Must follow standard safety and sanitation practices
- Must have full understanding of kitchen operations
- Must have organizational and budgeting skills
- Must be able to use knives, slicers, and choppers
- Must be able to review recipes and documentation
- Must be able to inspect food quality
- Must be able to plan and execute large plated and buffet functions
- Must deliver guest service that creates a positive experience
- Must be flexible with shifts and schedules
- Must present professional and enthusiastic appearance
- Must communicate clearly orally and in writing
- Must be able to direct subordinates
- Must participate in goal development and administration
- Must maintain effective working relationships
- Must work in varying noise and crowd environments
- Must be able to work under extreme temperatures
Job Qualifications
- High school diploma or equivalent
- Degree from a certified food service program, apprenticeship, culinary school, or equivalent
- Previous supervisory experience
- Minimum one year experience as Banquet Chef or similar role with 500+ cover counts in 4-star or 5-star establishment
- Valid licenses and certifications per Federal, State, and Gaming regulations
- Successful completion of ServeSafe Certification
- Knowledge of relevant federal, state, and local laws, codes, and regulations
- Familiarity with health, sanitation, and licensing ordinances
- Understanding of food products, standard recipes, and proper preparation
- Proficiency with computer programs and applications
- Knowledge of standard safety and sanitation practices for food and beverage service
- Comprehensive understanding of kitchen operations
- Demonstrated organizational skills and budgeting experience
- Ability to handle knives, slicers, and choppers
- Ability to review and comprehend recipes and documentation
- Ability to inspect food quality
- Ability to plan and execute plated and buffet functions for up to 2500 people
- Excellent guest service skills with an enthusiastic and professional demeanor
- Strong communication skills, both oral and written
- Ability to direct and observe subordinate actions
- Experience in developing and administering goals, objectives, and procedures
- Ability to maintain effective working relationships

Job Duties
- Create an atmosphere that induces guests to choose Hard Rock Hotel & Casino Sacramento at Fire Mountain for gaming entertainment
- Hire, train, motivate, evaluate, and supervise kitchen staff
- Manage food outlets and kitchen personnel
- Understand vision, department objectives, standards, guidelines, and budget for effective supervision
- Establish and maintain training and development procedures to ensure superior guest service
- Plan and create menus considering marketing conditions, dish popularity, and special occasions
- Evaluate sales data and guest feedback to update and maintain menu programs
- Check food preparation methods, portion sizes, and garnishing by tasting
- Procure food supplies and kitchen equipment from approved suppliers and approve quality
- Ensure proper storage of food items for quality and health compliance
- Implement and manage food safety practices among team members
- Collaborate with purchasing department for high quality food products
- Consult with catering sales manager and clients to tailor special menus
- Track food cost variances and adjust pricing to ensure net profit
- Meet budgetary guidelines for food cost, labor cost, and miscellaneous expenses
- Attend and participate in meetings, completing assigned follow-ups
- Perform cleaning and sanitizing of work and public spaces
- Other duties as assigned
