Job Requirements
- Must obtain and maintain valid licenses and certifications per Federal, State, and Gaming regulations
- must successfully pass background check
- must successfully pass drug screening
- must be at least 21 years of age
- must successfully pass ServeSafe Certifications
Job Qualifications
- High school diploma or equivalent
- degree from a certified food service program, apprenticeship, or culinary school
- previous supervisory experience
- minimum 1 year experience as Banquet Chef or similar role in a 4-star or 5-star establishment with large conference and banqueting facilities
- knowledge of federal, state, and local laws, codes, and regulations
- understanding of health, sanitation, and licensing ordinances
- proficiency in food products, standard recipes, and food preparation
- computer literacy
- knowledge of kitchen operations
- demonstrated organizational and budgeting skills
Job Duties
- Create an atmosphere that induces guests to make Hard Rock Hotel & Casino Sacramento at Fire Mountain their choice for gaming entertainment
- hire, train, motivate, evaluate, and supervise kitchen staff
- manage food outlets and kitchen personnel
- plan menus considering marketing conditions and holidays
- evaluate sales data and guest feedback to update menus
- check food preparation methods and portion sizes
- procure food supplies and kitchen equipment and approve quality
- ensure proper food storage and compliance with health requirements
- implement and manage food safety practices
- collaborate with purchasing and catering departments
- track food cost variances and adjust prices
- meet budgetary guidelines for food, labor, and miscellaneous costs
- participate in meetings and complete follow-up tasks
- clean and sanitize work and public spaces
- perform other duties as assigned
