The Master Cook, Pastry at Fontainebleau Las Vegas plays a vital role in supporting the pastry department by assisting chefs and venues throughout the resort. This full-time position is responsible for the daily preparation of a wide variety of baked goods and pastries served at various food and beverage outlets and banquets. Working under the guidance of the Executive Pastry Chef and Assistant Executive Pastry Chef, the Master Cook, Pastry ensures that all pastry products meet the highest standards of taste, visual appeal, and quality. This role also involves training and assisting pastry cooks and sous chefs to maintain consistency and excellence in every creation. The individual in this position will be adept at preparing, decorating, and presenting pastries with artistic flair, while maintaining strict sanitation and food safety protocols as required by health regulations.

The Master Cook, Pastry must demonstrate extensive knowledge of pastry techniques and ingredients, along with leadership skills to support the pastry team effectively. The ability to thrive in a fast-paced and sometimes stressful environment is essential, as this role demands multitasking and strong organizational capabilities. Job Requirements

  • must be at least 18 years of age
  • member must be able to qualify for licenses and permits required by federal, state, and local regulations
  • ability to read and interpret documents in English such as safety rules, operating and maintenance instructions, and procedure manuals
  • ability to read and communicate verbally in English
  • written communication skills in English may be required
  • ability to apply commonsense understanding to carry out instructions furnished in written, oral, or diagram form
  • ability to deal with problems involving several concrete variables in standardized situations
  • physical ability to stand regularly and use hands and fingers
  • ability to lift and/or move up to 10 pounds regularly, 25 pounds frequently, and 50 pounds occasionally

  • willingness to work in an environment with moderate noise and potential exposure to unrestricted secondhand tobacco smoke

Job Qualifications

  • pastry or baking degree or equivalent certification is preferred
  • extensive experience as a pastry cook or pastry chef, with a strong track record of pastry excellence
  • demonstrated leadership and supervisory skills in a pastry kitchen environment
  • in-depth knowledge of various pastry techniques, ingredients, and dessert flavor profiles
  • ability to work in a fast-paced environment while maintaining attention to detail and precision in pastry creations
  • strong organizational and time management skills to handle multiple tasks and priorities in the pastry kitchen
  • creativity and a passion for pastry innovation and continuous improvement
  • knowledge of food safety and sanitation standards and regulations specific to the pastry department
  • must be willing and able to work a flexible schedule including nights, holidays, and weekends
  • ability to work in a fast-paced, busy, and somewhat stressful environment

Job Duties

  • prepare a variety of baked goods and are able to teach pastry cooks to do the same
  • decorate and present pastries and baked goods in a tasteful and beautiful way
  • inspect pastry shop items upon completion to ensure they have been prepared correctly and attractively
  • keep the executive pastry chef and assistant executive pastry chef informed of all pertinent information and any irregularities occurring in the bake shop operation
  • assist with training kitchen staff, supporting the sous chefs and pastry cooks if necessary
  • ensuring food quality according to department standards and ensuring the cleanliness and sanitation of work areas and equipment in accordance with health department standards
  • temporary or permanent duties and responsibilities may be added to or modified as deemed necessary
