The Food and Beverage Manager role within Universal Horror Unleashed is a pivotal position responsible for overseeing the day-to-day operations of this multi-unit food and beverage venue, including Team Member Dining operations with mobile food dining ordering (MFDO). This role demands strong leadership to manage both hourly and exempt staff, ensuring that the teams operate cohesively to deliver superior customer service, maintain the highest food quality standards, and optimize operational efficiency. The Food and Beverage Manager is accountable for venue sales, direct operating expenses, inventory management, food cost control, profitability, and overall guest satisfaction.
This position requires a hands-on leader who will uphold all federal and state regulations, including Minor Law, Liquor Law, and Health Code standards. The manager will lead the budget management of the labor force, anticipate business needs, and align staffing accordingly to meet fluctuating demand. They will also coordinate operations with other departments, such as Entertainment management, to ensure smooth functioning and alignment with business forecasts.
The role encompasses a wide range of responsibilities from hiring and training staff to managing daily inventory and supplies, overseeing food and beverage cost controls, and executing special events that meet client expectations. The Food and Beverage Manager ensures compliance with health, safety, and environmental policies, and fosters a culture of continuous improvement and team development. Acting as the opening or closing manager on duty at times, the role requires flexibility and readiness to engage with all operational aspects.
Candidates for this role should have at least five years of food and beverage management experience, a professional food managers certification, and Nevada state certifications. An associate's degree is preferred. Proficiency in point-of-sale systems, purchasing, and inventory management software is essential. Moreover, the manager must demonstrate strong coaching and mentoring skills, an ability to enforce standards, and a dedication to maintaining a safe and welcoming environment for both guests and team members.

Job Requirements
- Must be able to work a flexible and varying schedule based on business demands
- Proficient in point-of-sale, purchasing and inventory systems
- Demonstrated experience coaching, mentoring and developing staff and ability to monitor performance and hold team accountable
- Knowledge of Southern Nevada Health regulations and proper food handling certifications

Job Qualifications
- Associate's degree preferred
- Five plus years of food and beverage management experience or equivalent combination of education and experience

Job Duties
- Manage leadership team and venue labor budget to ensure consistent day-to-day operations
- Track venue labor hours and costs to optimize against forecasts
- Communicate business forecast changes to management
- Ensure service, production, quality, and controls compliance in the venue
- Follow Food & Beverage department policies and procedures
- Oversee sales and operating transactions in compliance with procedures
- Lead execution of special events including menu planning and staffing
- Hire, coach, train, and develop team members and exempt direct reports
- Verify completion of all required forms and paperwork
- Set direction for Assistant Managers and front-line team members to ensure consistent guest experience
- Act as opening or closing manager on duty when required
- Plan and prepare team members, facilities, and materials for daily operations
- Maintain strict compliance with Department of Health and Beverage Laws
- Ensure adequate supply stock and maintain venue inventory
- Support optimization of food, beverage, and non-labor costs
- Verify cost tracking aligns with business plans
- Ensure proper staffing and management levels for multi-outlet operation
- Coordinate scheduling with Entertainment management
- Conduct meetings to review health regulations, service changes, and communication
- Participate in Environmental, Health & Safety responsibilities
- Perform other duties as assigned
