The Executive Chef and Manager role at Banner Health's University Medical Center Phoenix is a distinguished position within the Culinary and Nutrition Department. This role is full-time, primarily day shift (8am-4:30pm, Monday to Friday, weekends as needed), and is essential to maintaining the hospital’s culinary operations. University Medical Center Phoenix is a nationally recognized academic medical center with over 730 licensed beds, renowned specialty units, and a commitment to nursing excellence as demonstrated by its Magnet status. The hospital collaborates closely with the University of Arizona College of Medicine - Phoenix, integrating clinical care, research, and education.

As the Executive Chef and Manager, you will play a critical role in menu and recipe design, food production, and catering services, including upscale 4-star catering events. You will be responsible for the quality, presentation, and specifications of all food offerings, ensuring a superior culinary program for patients, staff, and visitors. Leadership of culinary staff is a key aspect of the job, involving training, development, and coordination to uphold the highest standards of food service within the hospital.

This role requires a strong focus on quality control, sanitation, and regulatory compliance, including adherence to HACCP standards and food safety certifications like ServSafe. You will manage all operational aspects such as purchasing, inventory management, personnel activities, and budget projections, utilizing your expertise in recipe costing, menu pricing, and revenue optimization. Additionally, the Executive Chef and Manager will collaborate with physicians, facility leaders, and hospital staff, ensuring excellent customer service and responsiveness to client needs.

Job Requirements

  • Bachelor's degree or equivalent experience
  • current ServSafe certificate or certified food manager license
  • minimum three years of relevant culinary experience in roles such as sous chef, baker, kitchen manager or large scale catering
  • ability to organize, lead and direct teams
  • effective communication and team building skills
  • problem-solving abilities with staff, patients, and physicians
  • proficiency in menu design and upscale catering
  • continued education in current food and nutrition
  • proficiency in common office software including Excel
  • capability to use electronic medical records applications
  • Arizona Fingerprint Clearance Card for employees at Banner Behavioral Health Hospital
  • signed Arizona Criminal History Affidavit upon hire

Job Qualifications

  • Bachelor's degree or equivalent experience
  • current ServSafe certificate or certified food manager license
  • three years of relevant culinary experience including sous chef, baker, quantity cook, kitchen manager or large-scale catering
  • proficiency in menu design for retail, catering, and gourmet dining
  • effective communication and team leadership skills
  • knowledge of food safety and sanitation regulations
  • ability to work with electronic medical records and office software such as Excel
  • continued training and education in food and nutrition
  • experience in healthcare preferred
  • familiarity with Infogenesis and CBORD applications preferred
  • bilingual abilities in Spanish/English a plus

Job Duties

  • Provide professional culinary advice and expertise for food production
  • train, develop and coordinate culinary activities for production staff
  • plan new retail concepts and design retail menus
  • establish quality control standards including ingredient determination, recipe standardization, and food preparation approval
  • direct personnel activities such as hiring, training, coaching, and discipline
  • research and analyze data to support menu decisions and project budgets
  • ensure sanitary practices and quality standards including portion control and HACCP compliance
  • develop recipes and instruct staff on production to meet budget requirements
  • interact with customers, physicians, hospital staff to address needs and resolve concerns
  • supervise staff and oversee operations and financial control in the Culinary Department
