Lory Student Center (LSC) Catering is a premier catering service provider based in northern Colorado, representing the largest catering operation in the region. Housing an expansive 370,000 square foot facility at the heart of Colorado State University, LSC Catering boasts exclusive catering rights within the Lory Student Center. Serving approximately 3,000 events annually, the department fulfills a key role in both campus and community event catering, striving to be the preferred choice among customers. The Lory Student Center itself is a nationally recognized student union operating as a $40 million auxiliary enterprise with a staff of about 125 full-time and 650 student employees. Welcoming nearly 24,000 daily visitors and hosting over 13,000 events annually, the LSC serves as a vibrant hub of activity and community engagement within Colorado State University.
The role of Hot Food Production Specialist under the supervision of the Production Chef Manager is crucial to the successful planning and delivery of catering events. This position involves executing food preparation and cooking in accordance with specified recipes and standards, ensuring top quality and consistency in food served. The specialist assists in the comprehensive preparations required to deliver ordered food and beverage, including setup and service support. Commitment to food safety, temperature control, and sanitary handling is paramount in this role, guided by adherence to health department standards and HACCP guidelines. Alongside operational responsibilities, the specialist mentors student employees, fostering a collaborative and efficient kitchen environment.

Job Requirements
- Minimum 1 year food production experience to include experience in catering
- Current certification in ServSafe and working knowledge of HACCP practices or other food handling/health department certification
- Experience working with fresh produce including inventory, ordering, preparing (i.e. washing, handling, cutting etc.)

- Excellent verbal communication and interpersonal skills
- Leadership capabilities to guide student employees
- Strong knowledge of health inspections, state and local food regulations
- Experience working in a college/university food service environment
- Experience working in a high-volume food service setting
Job Duties
- Follow established guidelines to prepare entrees, side dishes, sauces, soups, and desserts for catered events
- Calculate and adjust recipe quantities for specific events and ensure recipe adherence for consistency
- Maintain organization of prepared food to be heated for service, and accurately coordinate execution of all foods to be provided by department before event time
- Help mentor and coach student employees with general kitchen processes and task management
- Monitor and maintain food temperature logs in accordance with State, County, and EHS requirements
- Ensure proper cooling, date and label marking, food rotation, thawing, and cooking
- Assist with kitchen cleaning and closing responsibilities including cleaning and sanitizing work surfaces, and equipment, sweeping and mopping, discarding trash, recycling, and compost, and clearing dishes to the dish room
- Assist with gathering appropriate supplies and equipment to be delivered with food and beverage ordered
- Help deliver and set up service tables or place settings for various service styles, tend to buffets and serve table
