Colorado State University (CSU) is a renowned land-grant institution situated in Fort Collins, Colorado. LSC Catering, based within the Lory Student Center, is the largest caterer in northern Colorado, serving about 3,000 events annually. It serves as the exclusive caterer for the Lory Student Center, which is a 370,000 square foot facility. LSC Catering strives to be the premier caterer both on campus and within the larger community. The catering team is known for its commitment to providing high-quality food and professional service for a diverse clientele including university events and external community functions.
The role of the Food Production Specialist under the supervision of the Production Chef Manager involves supporting the main catering kitchen operations and coordinating food preparation for events. This position requires accurate cooking of food ordered through Lory Catering based on established recipes and standards. Responsibilities also include assisting with event setup and food and beverage service. Given the large volume of events and meals served, expertise in food production, safety standards, and team leadership will be essential.
The Food Production Specialist position demands attention to detail, strong organizational skills, and the ability to work effectively with student employees and other kitchen staff. The candidate will mentor and coach student team members on kitchen practices while ensuring strict compliance with food safety procedures including temperature monitoring and hygiene standards. Experience with catering operations and working with fresh produce is highly valued. Job Requirements
- Minimum 1 year food production experience to include experience in catering
- Current certification in ServSafe and working knowledge of HACCP practices or other food handling/health department certification
- Experience working with fresh produce which includes inventory, ordering, preparing (i.e. washing, handling, cutting etc.)
- Ability to mentor and coach student employees
- Capability to work in a team environment
- Physical ability to perform kitchen duties including lifting and standing for long periods
- Availability to work varied shifts including evenings and weekends according to event needs
Job Qualifications
- Minimum 1 year food production experience to include experience in catering
- Current certification in ServSafe and working knowledge of HACCP practices or other food handling/health department certification
- Experience working with fresh produce which includes inventory, ordering, preparing (i.e. washing, handling, cutting etc.)
- Excellent verbal communication and interpersonal skills
- Leadership capabilities to guide student employees ensuring adherence to policies and procedures
- Strong knowledge of health inspections, state and local food regulations
- Experience working in a college/university food service environment serving a diverse population
- Experience working in a high-volume food service setting
Job Duties
- Follow established guidelines to prepare entrees, side dishes, sauces, soups, and desserts for catered events
- Calculate and adjust recipe quantities for specific events and ensure recipe adherence for consistency
- Maintain organization of prepared food to be heated for service, and accurately coordinate execution of all foods to be provided by department before event time
- Help mentor and coach student employees with general kitchen processes and task management
- Monitor and maintain food temperature logs in accordance with state, county, and EHS requirements
- Ensure proper cooling, date and label marking, food rotation, thawing, and cooking
- Assist with kitchen cleaning and closing responsibilities including cleaning and sanitizing work surfaces and equipment, sweeping and mopping, discarding trash, recycling, and compost, and clearing dishes to the dish room
- Assist with gathering appropriate supplies and equipment to be delivered with food and beverage ordered
- Help deliver and set up service tables or place settings for various service styles, tend to buffets and serve table
