The role of Cook at the Long Beach Amphitheater is integral to supporting the culinary operations under the direction of the Executive Culinary Team. This position demands a combination of culinary skill, attention to detail, and the ability to maintain a positive, professional demeanor while working in a fast-paced environment. The cook will be responsible for preparing food according to set recipes, maintaining hygiene and safety standards, and supporting new employees in culinary operations. Key competencies include advanced knife skills, knowledge of meat and fish butchery, sauce and soup preparation, cold and hot food production, and the ability to handle multiple kitchen stations.

The successful candidate will play a role in ensuring that guests receive high-quality food products served with efficiency and professionalism. They are expected to adhere to health regulations, assist in inventory management, and occasionally step into leadership roles during the absence of supervisors or management. This role requires flexibility in scheduling, including working late nights, weekends, and holidays when necessary, reflecting the dynamic nature of events at the Amphitheater.

Job Requirements

  • must be at least 18 years old
  • able to work hours varying according to event schedule
  • able to lift and carry up to 50 lbs
  • willing to work extended hours including late nights, weekends, and holidays
  • must work in a team environment

Job Qualifications

  • 5 years cooking and food preparation experience in the food service industry
  • experience in premium services, catering, or concessions in sports and entertainment venues or high-volume restaurants or hotels
  • effective communication skills with co-workers and management

  • ability to interact with all levels of management

Job Duties

  • maintain a friendly, positive attitude and professional demeanor
  • execute station requirements according to Executive Culinary Team specifications
  • follow recipes to desired specifications
  • support culinary management with recipe and new food development
  • apply advanced knife skills and butchery techniques
  • prepare classic sauces, soups, and stocks independently
  • produce cold food items including salads, dressings, and sandwiches
  • prepare hot food items such as smoking, roasting, grilling, and braising of proteins
  • work at all kitchen stations efficiently
  • assist new employees in understanding culinary operations
  • implement production sheets and event orders
  • lead kitchen or service in the absence of management
  • expedite a la carte service or events
  • support monthly inventory processes
  • help implement HAACP plans
  • collaborate with executive culinary team on ordering and daily operations
  • maintain health and sanitation standards
  • multitask in a fast-paced environment
  • maintain positive guest relations
  • ensure quality food products
