The role of Line/Prep Cook is essential in any busy kitchen setting, involving the preparation and cooking of various food items including meats, seafood, poultry, and vegetables, using broilers, grills, fryers, and other kitchen equipment. The position requires someone who takes full responsibility for the quality of products served, consistently adhering to standard portion sizes, cooking methods, and company policies. This job demands attention to detail, following recipes exactly as stated, and remaining updated on any recipe changes to ensure the consistency and high quality of every dish served.

Candidates will be tasked with managing the flow of food, keeping the kitchen area clean and organized, and ensuring proper stock rotation and product labeling. They must maintain communication with the service and kitchen staff to coordinate ticket times effectively. The role also includes daily station setup, food prep work, thorough cleaning, and equipment maintenance to support smooth kitchen operations. Physical demands are significant, requiring the ability to lift heavy items, work long shifts standing and moving, and operate in a hot and sometimes damp environment. Job Requirements

  • High school diploma or equivalent
  • Prior experience in food preparation or culinary field preferred
  • Ability to follow recipe instructions exactly
  • Knowledge of kitchen safety and sanitation policies
  • Capacity to lift heavy items up to 70 lbs repeatedly
  • Ability to work on feet for 6-8 hour shifts
  • Capability to work in hot and potentially damp conditions
  • Must be able to hear and understand communication in a noisy environment
  • Must be able to read and comprehend menu checks
  • Strong manual dexterity and physical stamina

Job Qualifications

Job Duties

  • Prepares a variety of meats, seafood, poultry, vegetables, and other food items for cooking in broilers, grills, fryers, and a variety of other kitchen equipment
  • Assumes 100% responsibility for quality of products served
  • Knows and complies consistently with standard portion sizes, cooking methods, quality standards, and kitchen rules, policies, and procedures
  • Follows recipe instructions exactly as stated
  • Keeps updated on recipe changes and ensures proper execution of recipe procedures
  • Keeps entire kitchen clean
  • stocks and sets up rotation
  • Keeps prepared food continuously moving out of the kitchen
  • Communicates ticket times with service/kitchen staff and manager
  • Completes assigned prep work for stocking and set up of station
  • Breaks down and cleans station thoroughly every day
  • Requisitions products on a timely basis
  • Operates and maintains equipment properly
  • Cleans and sanitizes throughout the shift
  • Ensures proper rotation of all products and stocks products to par, labels, day dots, and signs all products
  • Keeps immediate supervisor promptly informed of problems or matters of significance and takes prompt corrective action or suggests alternatives
  • Performs all duties and responsibilities timely and efficiently according to company policies
  • Maintains favorable working relationships with company employees to promote cooperative working climate
  • Provides a favorable image of the company to promote its aims and enhance public recognition
  • Lifts and carries sacks and cases up to 70 lbs up to 20 times per shift
  • Frequent bending and stooping
  • Works frequently in hot and damp environment
  • Handles hazards such as cuts, burns, slipping, and tripping
  • Uses hands 99% of the time
  • Stands, moves, and walks during 6-8 hour shift
  • Must be able to hear kitchen, window person and/or chef requests amid loud noise
  • Must be able to read menu checks
