Job Description

The role available at Lagunitas is a key position within the kitchen team, responsible for the preparation of food with a focus on efficiency, sanitation, and consistency. This job is typically part-time, with shifts scheduled mainly from Friday to Sunday between 12 pm and 8 pm, accumulating around 20 to 24 hours per week during the active season from April 28 to October 4. The ideal candidate will thrive in a fast-paced, high-pressure kitchen environment, demonstrating organizational skills to manage tasks quickly and effectively while working cohesively as a team member. The position requires scrupulous adherence to safety procedures and the ability to tolerate heat and the physical demands associated with kitchen work.

This role involves setting up stations with necessary supplies, preparing a variety of menu items including meats, seafood, poultry, and vegetables, and handling various kitchen equipment such as broilers, ovens, and grills. The cook must maintain proper food handling practices including correct storage, covering, dating, and rotation of food items to ensure freshness and safety. In addition, the position entails maintaining stock levels during service, adhering to standard portion sizes and cooking methods, using preparation tools responsibly, and ensuring the kitchen is clean and organized at all times.

The role also includes preparing dishes for customers with food allergies or intolerances, managing the cleanliness of storage areas, returning utensils to appropriate locations, and operating dishwashing equipment as necessary. Collaboration with the taproom manager and other team members is vital to the smooth operation of the kitchen and taproom. This job demands standing for long periods and performing moderate physical activities, including lifting weights up to 50 pounds, as well as the flexibility to work rotating shifts, weekends, holidays, and overtime as needed.

Job Duties

  • Set up stations and collect all necessary supplies to prepare menu for service
  • Prepares a variety of foods including meat, seafood, poultry, vegetables, and other items with pre-preparation of ingredients
  • Cook on various kitchen equipment such as broilers, ovens, and grills
  • Properly handle raw or prepared foods and non-food supplies including covering, dating, storing, and rotating food items
  • Stock and maintain sufficient levels of food products at line stations to assure smooth service
  • Know and comply with standard portion sizes, cooking methods, quality standards, and kitchen policies
  • Use food preparation tools according to manufacturer instructions
  • Close the kitchen correctly and follow closing checklists for kitchen stations
  • Maintain a prepared and sanitary work area
  • Assist with cleaning, sanitation, and organization of kitchen and storage areas
  • Prepare dishes for customers with food allergies or intolerances
  • Ensure storage areas are tidy and products stored appropriately
  • Use safe and hygienic food handling practices
  • Return dirty food preparation utensils to appropriate areas
  • Operate dishwashing equipment as needed
  • Perform other duties as assigned by Kitchen Manager or Lead Cook
