The role of Line Cook/Commis at One&Only Moonlight Basin is integral to the culinary team, assisting higher-level chefs in delivering the exceptional food experiences that the brand is acclaimed for. This full-time, year-round position involves preparing, producing, and serving food items according to the highest quality and safety standards within the designated kitchen area. The Line Cook/Commis must be knowledgeable about all kitchen policies and procedures, food and beverage standards, health and hygiene regulations, and fire and safety codes. This role requires dedication to maintaining the brand’s standards of excellence in food preparation and presentation.

In this position, the Line Cook/Commis will work closely with the Demi Chef, Chef de Partie, and culinary management to follow standardized recipes and preparation methods. Familiarity with menu items, ingredients, cooking methods, portion sizes, preparation times, and presentation is essential for ensuring every dish meets the expectations of taste, temperature, and visual appeal. Daily responsibilities also include monitoring food storage conditions, ensuring proper cooling and storage of perishable items, and maintaining a clean, tidy, and efficiently organized workstation.

The Line Cook/Commis is expected to take full charge of their assigned section during shifts, performing routine tasks independently while consulting senior chefs for guidance. The role demands strict adherence to food safety standards such as HACCP and DIVERSEY and a proactive approach to preventing the use of spoiled or contaminated products. Employees will receive ongoing on-the-job training and mentoring from senior chefs for continual skill development. Additional duties such as assisting the stewarding team, executing thorough daily cleaning routines, and undertaking other tasks as assigned by management support the smooth operation of the kitchen and elevate guest satisfaction.

Job Duties

  • Follow the standard recipes, methods of preparation, and presentation according to department/hotel standards
  • Be familiar with the menu including ingredients, portion size, cooking method, preparation time, and presentation
  • Constantly check prepared food for taste, temperature, and visual appeal
  • Check all fridges and storerooms daily to ensure proper temperature and quality of perishables
  • Prevent use of spoiled or contaminated products in food preparation
  • Maintain proper grooming and be on duty according to schedule
  • Maintain sufficient mise-en-place and report shortages to senior chef
  • Ensure perishable items are properly stored and workstations are clean before shift end
  • Take full charge of assigned section and carry out routine tasks independently
  • Follow all food safety standards such as HACCP and DIVERSEY
  • Participate in on-the-job training and mentoring
  • Assist with duties assigned by line manager or management team
  • Support stewarding team when needed
  • Perform daily cleaning of stations, equipment, and other duties as assigned
