Job Duties

  • Learns all wok recipes, cook times, and cooking techniques per Din Tai Fung’s procedures
  • Checks the ingredient quality prior to beginning cooking
  • Cooks the ingredients in accordance with Din Tai Fung’s recipes
  • Plates the final product in accordance with Din Tai Fung’s plating guidelines
  • Prepares and cuts garnishes for wok line items
  • Labels all items in accordance with Health Department regulations and Din Tai Fung procedures
  • Attends monthly staff meetings and wok meetings
  • Keeps all kitchen areas clean and sanitized
  • Organizes items within the walk-in coolers and freezers
  • Lifts and moves boxes, bags, chairs, and tables (up to 50 pounds)
  • Assists with regular deep cleaning of the kitchen
  • Maintains confidentiality regarding all proprietary information, including recipes and Standard Operating Procedures (SOPs)
