The role available is for a Line Cook, a crucial position within the kitchen brigade. This position involves preparing food items in alignment with production requirements, recipe cards, and established portion standards to ensure consistent quality. The Line Cook will contribute to the smooth operation of the kitchen by beginning food items prepared ahead of time, managing food storage and rotation according to company and safety standards, and assisting in inventory checks and shift setup. The role also includes responsibility for minimizing food waste and controlling food costs, as well as adhering to specific sustainability practices through HHM's EarthView program.

In addition to culinary tasks, the Line Cook is expected to maintain sanitation and safety standards by properly operating and cleaning kitchen tools and equipment and practicing safe work habits per MSDS and OSHA guidelines. The position offers a clear career development path from Line Cook to Lead Cook, then Sous Chef, and ultimately Assistant to the Head Chef, reflecting opportunities for growth and skill advancement within the company.

Job Duties

  • Prepare food of consistent quality following recipe cards and production and portion standards
  • begin food items that are prepared ahead of time, making sure not to over-prepare estimated needs
  • date all food containers and rotate per company standards, making sure that all perishables are kept at proper temperatures
  • check pars for shift use, determine necessary preparation, freezer pull and line set-up
  • note any out-of-stock items or possible shortages
  • return all food items not used on the next shift to designated storage areas, being sure to cover and date all perishables
  • assist in setting up plans and actions to correct any food cost problems, and control food waste, loss and usage per company standards
