The available role is that of a Line Cook at the Mkutano House, a new and innovative restaurant concept within the San Diego Zoo Wildlife Alliance environment, located in Escondido, California. This position is hourly, part-time, non-exempt, and union-affiliated, offering an hourly wage of $24.07. The Mkutano House focuses on community, connection, and exceptional guest experiences through its scratch kitchen concept specializing in modern fusion cuisine that emphasizes fresh, locally sourced, and seasonal ingredients. The Line Cook will be integral to this operation, working under minimal supervision while performing moderately complex cooking duties to prepare large quantities of food. Reporting to the Senior Line Cook and Sous Chef, this role involves assisting with kitchen planning and supervision, executing complex recipes, ensuring correct plate presentation, maintaining a fast service pace, and supporting the team through training and mentorship.

Job Requirements

  • Education, training, and/or experience demonstrating essential function capability
  • Experience as a cook or fry cook
  • Completion of commercial cooking apprenticeship or vocational training

Job Duties

  • Assist chef and Senior Line Cook in kitchen planning and supervision
  • Understand and execute complex recipes
  • Ensure correct plate presentation
  • Maintain speed of service
  • Assist chef in menu planning
  • Prepare and cook menu items
  • Ensure preparations are complete for the day’s menu
  • Prepare main and side dishes for banquets and buffets
  • Follow proper plate presentation and garnish setup
  • Maintain kitchens in a clean and orderly condition
  • Oversee daily food preparation
  • Correct issues affecting food production, service, or quality
  • Provide support to chefs, managers, and supervisors
  • Assist with new hire training and mentor staff
