Job Requirements

  • Must have a high school diploma or equivalent
  • At least three years experience in a cook position
  • At least one year experience in banquet operations
  • Ability to follow recipes and production standards
  • Strong knowledge of health and safety regulations
  • Ability to stand for several hours
  • Ability to work in a fast-paced, physical environment
  • Willingness to work irregular hours including early mornings, late evenings, weekends, and holidays
  • Ability to handle exposure to cold in walk-in coolers/freezers
  • Ability to handle exposure to heat from burners and steam
  • Ability to lift and move items as required
  • Must be able to work extended hours as needed

Job Qualifications

  • High school diploma or equivalent
  • Two-year culinary degree or continuing education credits preferred
  • Minimum three years’ experience in a cook position
  • Minimum one year experience in banquet operations
  • Knowledge of major kitchen equipment and appliances
  • Ability to operate ovens, stoves, grills, steamers, smokers, mixers, kettles, char-broilers
  • Knowledge of kitchen small wares
  • Ability to follow verbal and written instructions
  • Ability to read and speak English
  • Strong knowledge of state health codes and sanitation standards
  • Ability to work extended hours effectively
  • Strong organizational skills and ability to multi-task
  • Skill in volume production and hands-on cooking
  • Knowledge of diverse culinary techniques including multi-ethnic cuisine, sauces, plate presentation, and sanitation
  • Ability to execute large functions
  • Ability to perform basic math to execute recipes

Job Duties

  • Maintain organized and sanitary workstation
  • Follow approved recipes and production standards
  • Prepare meats, vegetables, proteins, starches, and soups according to recipes or chef instructions
  • Properly label and date food items for storage
  • Maintain and organize storage rooms, refrigerators, and freezers
  • Organize freezer pulls as necessary
  • Minimize waste by controlling overage and usage
  • Educate and train seasonal kitchen staff on proper procedures and standards
  • Assemble and complete final production of hot and cold food items
  • Assist with plating of catered meals
  • Perform other duties as assigned and necessary
