The Line Cook position at The Valley Hotel, Curio by Hilton, offers an exciting opportunity for both full-time and part-time professionals passionate about culinary arts. Reporting to the Executive Sous Chef, Executive Chef, and Food & Beverage Director, this role focuses on preparing high-quality culinary delights that elevate the dining experience for guests and hotel clientele. This position requires attention to detail, adherence to recipes and production standards, and a dedication to food safety and sanitation. Line Cooks work across various kitchen stations including broiler, sauté, fry, pantry, and expediter, ensuring all orders are prepared accurately, promptly, and consistently.

Key responsibilities include preparing food items using production and portion standards, managing inventory and pars for shift use, and ensuring proper storage and dating of all food containers to maintain freshness and safety. The role demands strong manual coordination and physical stamina to handle industrial cooking equipment, carry food containers, and stand for extended periods. Effective communication and teamwork are essential to maintain smooth kitchen operations and deliver exceptional service to guests. Job Requirements

  • High school education or equivalent experience
  • Six months to one year in food/beverage services environment
  • Ability to operate industrial cooking equipment
  • Basic cooking and knife handling skills
  • Knowledge of food safety and sanitation procedures
  • Physical ability to lift 20 to 40 lbs and stand for long periods
  • Ability to communicate in English
  • Willingness to follow management instructions and perform assigned duties

Job Qualifications

  • High school education or equivalent experience
  • Culinary certificate or degree preferred
  • Six months to one year in a food/beverage services environment
  • Strong knowledge of operating industrial sized ovens and cooking ranges
  • Knowledge of preparing different types of cuisines, relishes, soups and salads
  • Basic understanding of professional cooking and knife handling skills
  • Knowledge of safety, sanitation and food handling procedures
  • Ability to read, speak and understand English
  • Manual coordination to punch buttons, grasp items, and carry containers loaded with food and liquids
  • Ability to lift, push and carry 20 to 40 lbs
  • Ability to stand continuously for long periods
  • Good communication skills

Job Duties

  • Prepare food of consistent quality following recipe cards, use records, production and portion standards, per order specs
  • Start food items that are prepared ahead of time, making sure not to prepare more than estimated needs
  • Remember all multiple orders and easily assemble them to the order
  • Work all stations on kitchen line to include broiler, saute, fry, pantry, and expediter stations
  • Date all food containers and rotate as per the SOP, making sure that all perishables are kept at proper temperatures
  • Check pars for shift use, determine necessary preparation, freezer pull, and line set up
  • Note any out-of-stock items or possible shortages
  • Assist in keeping buffet stocked
  • Return all food items not used on next shift to designated storage areas, being sure to cover/date all perishables
  • Assist in setting up plans and actions to correct any food cost problems
  • control food waste, loss and usage
  • Perform other duties as assigned, requested or deemed necessary by management
