The role of a Line Cook at Eataly is pivotal in delivering the authentic Italian dining experience that guests expect. As a Line Cook, you will be responsible for transforming high-quality, unique ingredients into delicious Italian dishes within Eataly’s lively and high-volume open kitchen environment. This position reports directly to the Sous Chef Manager or Chef de Cuisine and requires strong culinary skills, attention to detail, and the ability to work efficiently in a fast-paced setting. The Line Cook plays an essential role in maintaining the high standards of Eataly by preparing, cooking, and plating food items that adhere to set recipes, portion sizes, and quality standards.
A typical day involves handling various cooking techniques such as portioning, cutting, slicing, preparing batters and breads, whipping, beating, frying, and sauting. The Line Cook must select the appropriate cuts of meat, poultry, shellfish, fish, game, or vegetables for each dish, ensuring freshness and quality. Plating is also a critical aspect, as each menu item must be presented attractively with the appropriate garnishes to enhance the dining experience visually. Eataly’s commitment to quality and authenticity extends to strict adherence to department rules, procedures, and health regulations, making compliance and kitchen discipline central to the role. Job Requirements
- Availability to work onsite with a flexible schedule often including evenings, weekends and holidays
- Ability to lift up to 50 pounds
- Ability to exert well-paced mobility for up to 8 hours, including standing, walking, bending and squatting
- Ability to work with commercial equipment including stand mixers, ovens, torches, etc.
Job Qualifications
- 2+ years in a food preparation position
- Good knife skills and finger dexterity to use small tools and utensils adeptly
- Degree from a culinary arts training program preferred
Job Duties
- Portions, cuts, slices, dips, batters, breads, whips, beats, maintains holding temperature, fries and sauts
- Selects cuts of meat, poultry, shellfish, fish, game or vegetables to be used for frying or sauting
- Plates menu items along with appropriate garnish
- Follows recipes and complies with portion sizes, quality standards, department rules and procedures, and Department of Health regulations
- Performs other duties as required or assigned
