The role available is designed for individuals looking to build a career in culinary arts within a prestigious outdoor hospitality setting. This position involves mentorship and training of junior culinary staff, hands-on culinary duties, and preparing to oversee line shift production and daily kitchen operations. It offers candidates the unique opportunity to develop their skills in various cooking techniques such as sautéing, broiling, frying, roasting, butchery, garde manger, pantry, and breakfast cookery. Candidates will also learn to manage food and labor costs efficiently while cultivating a positive working environment rooted in teamwork and mutual respect.

Beyond culinary duties, the role includes responsibilities like inspecting incoming food for freshness, maintaining food preparation records aligned with HACCP guidelines, and adhering to Food and Beverage standard operating procedures and government health regulations. Mentorship extends beyond the kitchen to include the stewarding department, fostering career development and providing advancement opportunities. The position also involves logistical tasks such as moving supplies between venues on the ranch and operating ranch vehicles, adding variety and engagement to the workday.

The role requires strong communication skills, basic computer literacy including Excel, Word, and Outlook, and proficiency with cooking and kitchen preparation equipment. Compensation for the role is up to $18.75 per hour with a 10% guaranteed end-of-season bonus. The ranch provides a comprehensive benefits package starting day one of employment, including medical, dental, and vision insurance for both seasonal and full-time associates, paid time off with rollover for full-time employees, and a 401(k) plan with company match after the first month of employment. Additionally, the ranch makes employee housing available at subsidized rates and offers three meals per day at no cost. Job Duties

  • Mentor and train cooks III, interns, and stewards while learning to execute daily operational duties and supervise line shift production
  • learn and practice all culinary duties and food production standards in preparation for a supervisor role
  • follow all Food and Beverage WLW SOPs, health department regulations, and federal guidelines
  • inspect all incoming foods for freshness and proper specifications
  • store raw foods and prepared items following mandated procedures
  • maintain food prep records in accordance with HACCP guidelines
  • manage food cost and labor cost, ensuring efficient scheduling and minimizing overtime
  • supervise and mentor the stewarding department for career development and potential advancement
  • maintain a respectful and cooperative work environment, fostering teamwork
  • assist with moving supplies to multiple ranch venues and operating a ranch vehicle or ranger
