The line cook role at Cafe Central is integral to the kitchen's success. This full-time position involves preparing a wide variety of meats, seafood, poultry, vegetables, and other food products using multiple cooking methods including broiling, grilling, frying, sauteing, and baking. The line cook is responsible for ensuring every product meets the highest quality standards, complies with portion sizes, and follows precise cooking methods and kitchen policies. Proper station maintenance, sanitation, and adherence to food safety guidelines are critical components of this role.
Individuals in this position must be detail-oriented and able to work efficiently under pressure during busy service periods. The ability to follow recipe specifications, manage inventory at line stations, and contribute to overall kitchen prep assignments during slower times is essential. The line cook also plays a part in maintaining the kitchen’s cleanliness and organization, preparing food items for cooking through portioning, battering, and marinating, and ensuring plates are presented according to established garnishing and presentation standards.
This position requires punctuality and commitment, including attending all scheduled employee meetings and actively contributing suggestions to improve kitchen operations. Closing duties are shared responsibilities, with the line cook participating in proper kitchen shut-down procedures and assisting colleagues as needed. Flexibility and teamwork are key to succeeding in this fast-paced environment.

Job Requirements
- High school diploma or equivalent
- Previous kitchen experience preferred
- Ability to work long hours and in a high-stress environment
- Must be able to stand for extended periods
- Must be able to work flexible shifts including nights, weekends and holidays
- Must adhere to health and safety regulations
- Strong work ethic and commitment to quality
- Ability to perform physically demanding tasks
- Good team player
Job Qualifications

Job Duties
- Prepares a variety of meats, seafood, poultry, vegetables and other food items for cooking in broilers, ovens, grills, fryers and a variety of other kitchen equipment
- Assumes 100% responsibility for quality of products served
- Knows and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures
- Stocks and maintains enough levels of food products at line stations to assure a smooth service period
- Portions food products prior to cooking according to standard portion sizes and recipe specifications
- Maintains a clean and sanitary work station area including tables, shelves, grills, broilers, fryers, saute burners, convection oven, flat top range and refrigeration equipment
- Prepares item for broiling, grilling, frying, sauteing or other cooking methods by portioning, battering, breading, seasoning and/or marinating
- Follows proper plate presentation and garnish set up for all dishes
- Handles, stores and rotates all products properly
- Assists in food prep assignments during off-peak periods as needed
- Closes the kitchen properly and follows the closing checklist for kitchen stations
- Assists others in closing the kitchen
- Attends all scheduled employee meetings and brings suggestions for improvement
- Performs other related duties as assigned by the chef or manager-on-duty
