Job Description
Surety Hotel is an esteemed establishment located in the historic Hippee Building in downtown Des Moines. Part of Marriott's Autograph Collection, this hotel occupies a beautifully restored 1913 Beaux-Arts landmark and combines independent character with world-class hospitality. With 137 guest rooms and suites, vibrant gathering spaces, and onsite dining at Mulberry Street Tavern, Surety Hotel celebrates Des Moines' rich past while shaping its future. It prides itself on unmatched service and a superior level of hospitality rooted in community connection and the spirit of the city. As a destination for travelers and a point of pride for the City of Certainties, Surety Hotel offers an atmosphere where history and modern luxury converge in perfect harmony.
The Line Cook position at Surety Hotel reports directly to the Executive Chef and forms a vital part of the culinary team. This non-exempt role is integral to the everyday culinary operations, where developing and executing scratch-made dishes with precision and care is paramount. The ideal candidate for this role is someone who has spent time perfecting their craft behind various kitchen stations, including grill, sauté, and salad stations, and feels confident running each. This role encourages both individual initiative and teamwork, as collaboration with the culinary leadership team, including Executive and Sous Chefs, is critical for ongoing success.
At Aparium Hospitality, the culinary team's culture revolves around mutual respect, humility, and continuous learning. The Line Cook is expected to embrace these values, fostering open communication with peers and leadership while adhering to the highest culinary standards. Passion for the culinary arts, combined with efficient organization and professional urgency, will ensure an exceptional culinary experience for every guest. The role demands a fundamental foundation of culinary techniques and an enthusiastic approach to growth through constant study and practice. Working in a fast-paced hotel kitchen environment requires stamina, attention to detail, and respect for ingredients and equipment alike.
The Line Cook plays a vital role beyond cooking; they also contribute to maintaining order in the kitchen, reporting facility and equipment conditions, and participating actively in team meetings and feedback sessions. Whether working alone or in collaboration with the culinary leadership, the Line Cook supports the overall mission of delivering translocal hospitality and intuitive service. The environment at Surety Hotel embraces innovation and teamwork—sheltering away from any old-school culinary attitudes—and fosters a culture where every member is valued.
