The role of the Line Cook is pivotal within the kitchen team, responsible for cooking a variety of seafood, meats, fish, vegetables, soups, and other hot food items, while ensuring that food preparation meets the restaurant's high standards. This position reports directly to the Restaurant Manager and Kitchen Manager and requires the cook to skillfully prepare, portion, plate, and garnish dishes according to recipe specifications and health department guidelines. The Line Cook must expertly manage food temperatures, storage, and rotation, while maintaining cleanliness and organization in the food prep areas. They should be capable of using various kitchen equipment, such as broilers, grills, fryers, ovens, blenders, and slicing tools, to execute their tasks efficiently. The role also involves assisting with food prep during off-peak hours, supporting coworkers during busy times, and ensuring a smooth operation during service periods. Excellent communication skills and the ability to work well within a team are essential, along with physical stamina to stand for extended periods and lift up to 40 pounds. Job Requirements
- Two or more years of experience in kitchen preparation and cooking
- At least 6 months experience in a similar capacity
- Able to communicate effectively with managers and co-workers
- Able to reach, bend, stoop and frequently lift up to 40 pounds
- Able to work in a standing position for long periods of time up to 9 hours
- Knowledge of health department food handling guidelines
- Ability to maintain cleanliness and sanitation
- Willingness to work flexible hours including busy service periods

Job Duties
- Cook seafood, meats, fish, vegetables, soups and other hot food products
- Prepare and portion food products prior to cooking
- Plate and garnish cooked items and prepare appropriate garnishes
- Follow all health department guidelines regarding proper food handling, storage, and cooling
- Prepare food items in a timely fashion
- Promote and act in a manner consistent with providing an enjoyable dining experience
- Ensure proper order of food being prepared and distribute orders to cold and fry side
- Maintain temperature of food and storage areas
- Inspect, clean, and maintain food preparation and serving areas
- Ensure food is stored and cooked at correct temperatures
- Check freshness of food and ingredients and rotate stock
- Follow restaurant's portion sizes, cooking methods and quality standards
- Report discrepancies to management
- Stock and maintain sufficient food levels at stations
- Handle, store and rotate food products according to policies
- Stir or turn foods to ensure even cooking
- Maintain hot foods above 140 degrees Fahrenheit
- Season and cook food according to recipes
- Bake, roast, broil and steam various foods
- Weigh, measure and mix ingredients using kitchen utensils
- Portion, arrange and garnish food to specifications
- Observe and test foods for proper cooking
- Follow proper plate presentation
- Assist in food prep during off-peak periods
- Substitute or assist other cooks during emergencies
- Close kitchen following checklist and assist others
- Coordinate with co-workers to meet guests' needs
- Fill-in for employees to ensure service standards
- Estimate food consumption and procure food
- Coordinate with management
