In addition to cooking, the Cook is responsible for estimating food requirements based on the menu and procuring ingredients from storage units such as freezers and refrigerators. Equipped with knowledge of regulating cooking temperatures using ovens, broilers, grills, roasters, and steam kettles, the Cook will skillfully prepare food while monitoring its quality through taste, smell, and visual assessment to guarantee well-seasoned and fully cooked dishes. The position also involves meat carving, portioning food on serving plates, and adding appropriate gravies, sauces and garnishes to complete each serving.
The role extends beyond primary cooking duties to include supporting activities like washing, peeling, cutting, and shredding fruits and vegetables, trimming meats, baking breads and pastries, and assisting on the line with tasks such as tray setup and salad preparation. Maintaining the cleanliness and orderly arrangement of the work area is also a key responsibility. The Cook may be required to perform additional tasks as assigned by supervisory food service staff, which could range from marginal to essential depending on staffing needs.

Job Requirements

Job Qualifications

Job Duties
- Prepares, seasons and cooks soups, meats, vegetables, desserts, sauces, stews, casseroles and other food stuffs
- Reads menu to estimate food requirements and procures ingredients from storage, freezer or refrigerator
- Adjusts thermostat controls to regulate temperature of ovens, broilers, grills, roasters and steam kettles
- Measures and mixes ingredients according to recipe
- Bakes, roasts, broils and steams meats, fish, vegetables and other foods
- Observes and tests food being cooked by tasting, smelling and piercing with a fork to determine it is cooked and properly seasoned
- Carves meat, portions food on serving plates, adds gravies, sauces and garnishes to fill orders
- Prepare and cook meals for residents requiring special diets
- Ensures food items are prepared in accordance with food code worksheet
- Performs other related duties as directed by the Chef, Food Service Manager or Director of Food Service
