Job Requirements

  • High school diploma or equivalent
  • four years in the Cook 2 or equivalent position at a premier restaurant, resort, or hotel property
  • basic hot/cold food cooking knowledge
  • proficient knife skills
  • knowledge of standards of quality and production

Job Duties

  • Assign tasks to the Cook 2 employees with the approval of the chefs or sous chefs
  • grill, bake, sauté, steam and cook all necessary menu items including soups and sauces as directed by the sous chefs
  • discuss daily events and production schedule with the sous chefs
  • make suggestions to improve the quality of food production and presentation
  • work with butcher to ensure consistent product, portions, cuts, and amounts
  • assist in maintaining a clean and orderly work environment
  • carefully follow recipes provided
  • add garnishes to completed plates of cooked food
  • time the cooking of food to ensure entrees from each order are completed simultaneously
  • clean cooking surfaces and equipment
  • check the quality of food produced at the station ensuring consistency of each mise en place
  • arrange cooked food on plates ensuring attractive presentation
  • contribute a list of needed items to the daily food order with the approval of the chef
  • rotate food in coolers, dry storage and personal mise en place to ensure freshness and reduce waste
  • help train new Cook 2 employees in their responsibilities and organization of the kitchen
  • set up the mise en place for the station
  • set up buffet stations and perform carving, stir fry or other designated functions at that station
  • comply with all Pebble Beach Company safety and health policies and procedures
