Job Requirements

  • high school diploma or equivalent
  • minimum 1 year of experience in garde manger or similar culinary role
  • valid food handler certification
  • ability to work flexible hours including weekends and holidays
  • strong attention to detail and quality
  • excellent communication skills
  • ability to follow recipes and safety procedures

Job Qualifications

  • follow sanitation and ecosystem safety rules and procedures
  • attend mandatory department meetings
  • possess current and renewed food handler certification

Job Duties

  • prepare all cold and hot food items including salads, appetizers, dressings, soups, entrees, sauces, and stocks
  • keep all walk-in coolers in garde manger and hot side areas clean
  • have mise en place ready for the day’s banquet business
  • fill out daily and next day requisitions accurately
  • prioritize banquet food preparation tasks efficiently
  • coordinate with banquet chef or supervisor for special product preparation
  • control quality and consistency of all food served
  • ensure food function readiness 45 minutes prior to service
  • manage timely supply of food necessities for service
  • assist in controlling food cost through careful management
  • ensure proper storage for advanced production items
  • file pastry cart orders when necessary
  • report any maintenance or security issues promptly
  • open all work areas in the morning and secure all areas before leaving
