Job Requirements
- high school diploma or equivalent
- minimum 1 year of experience in garde manger or similar culinary role
- valid food handler certification
- ability to work flexible hours including weekends and holidays
- strong attention to detail and quality
- excellent communication skills
- ability to follow recipes and safety procedures
Job Qualifications
- follow sanitation and ecosystem safety rules and procedures
- attend mandatory department meetings
- possess current and renewed food handler certification
Job Duties
- prepare all cold and hot food items including salads, appetizers, dressings, soups, entrees, sauces, and stocks
- keep all walk-in coolers in garde manger and hot side areas clean
- have mise en place ready for the day’s banquet business
- fill out daily and next day requisitions accurately
- prioritize banquet food preparation tasks efficiently
- coordinate with banquet chef or supervisor for special product preparation
- control quality and consistency of all food served
- ensure food function readiness 45 minutes prior to service
- manage timely supply of food necessities for service
- assist in controlling food cost through careful management
- ensure proper storage for advanced production items
- file pastry cart orders when necessary
- report any maintenance or security issues promptly
- open all work areas in the morning and secure all areas before leaving
