The role of Lead Line Cook at Geronimo Hospitality Group places you at the heart of this dynamic and energetic team. This position is responsible for ensuring that every dish served meets the highest standards of quality and consistency expected from this award-winning group. Working collaboratively with fellow kitchen professionals, you will have the opportunity to contribute directly to the creation of memorable dining experiences that leave lasting impressions on guests. Punctuality, professionalism in appearance and conduct, and attention to detail are pivotal attributes in this role. Responsibilities include opening and closing kitchen operations, precise ingredient measurement and preparation, stringent adherence to food safety protocols such as ServSafe guidelines, and maintaining cleanliness and organization of the kitchen workspace. As Lead Line Cook, you will be entrusted with leadership in ensuring all kitchen stations are properly stocked and prepared for each shift, assisting with food quality control, and supporting teammates to ensure seamless kitchen operations. This position demands not only technical culinary skills such as grilling, roasting, broiling, and portioning, but also a positive attitude and a commitment to fostering a supportive, high-energy work environment. Beyond food preparation, the role involves building a deep understanding of the restaurant’s menu and ingredients, assisting in quality assurance efforts including food temperature checks, and upholding the restaurant’s standards in food safety and hygiene.

Job Requirements
- Previous experience in a non-fast food restaurant or training in a culinary school
- ServSafe Certification or willingness to obtain certification within 90 days of employment
- Ability to add, subtract, multiply and divide in all units of measure
- Ability to keep up with a fast paced environment
- Availability to work late nights, weekends and holidays
- Minimum age of 18 years
- Ability to perform with minimum supervision
- Wearing slip resistant shoes as protective clothing
- U.S. work authorization required

Job Duties
- Report to work on time according to posted schedule in specified uniform
- Open/close the kitchen properly and follow the opening/closing checklist for kitchen stations
- Measure and mix ingredients accurately, review any modifications to recipes to meet quality standards with Executive Chef/Kitchen Manager
- Test food being cooked by properly taste testing and taking food temperatures using proper ServSafe procedures and guidelines
- Perform food preparation and cooking skills including measuring, washing, peeling, cutting, grilling, baking, roasting, broiling, steaming, carving and portioning foods
- Monitor food quantities, quality and display during preparation
- Stock work-station appropriately for each shift to be ready for the meal period
- Develop and have knowledge of restaurant's menu, including what ingredients are used to prepare each dish and how to build each dish to order
- Date all food containers and rotate as needed, making sure that all perishables are kept at proper temperatures
- Clean work space after each shift including switching of food storage containers, labeling of ingredients, scrubbing and sanitizing of all parts of station
