The role of Lead Line Cook at Eataly is an exciting opportunity for culinary professionals who are passionate about Italian cooking and ready to thrive in a dynamic, high-volume, open kitchen environment. Reporting directly to the Sous Chef Manager and Chef de Cuisine, the Lead Line Cook is responsible for transforming high-quality, unique ingredients into authentic Italian dishes. This position is not just about cooking but also about leadership, as the Lead Line Cook oversees other line cooks to ensure exceptional performance standards during service.

The position requires meticulous attention to detail, from portioning and slicing to cooking methods such as frying and sautéing, all while maintaining authenticity and quality. The Lead Line Cook carefully selects cuts of meat, poultry, shellfish, fish, game, or vegetables to ensure only the best components are used in meal preparation. Plating is an art in itself, as every dish must be presented with the appropriate garnish and visual appeal. Adherence to recipes, portion sizes, quality standards, and health regulations is paramount in maintaining the restaurant's reputation for excellence.

Job Requirements

  • Availability to work onsite with a flexible schedule often including evenings, weekends and holidays
  • ability to lift up to 50 pounds
  • ability to exert well-paced mobility for up to 8 hours, including standing, walking, bending and squatting
  • good knife skills and finger dexterity to use small tools and utensils adeptly

Job Qualifications

  • 2+ years in a food preparation position
  • excellent communication skills
  • degree from a culinary arts training program preferred

Job Duties

  • Oversees other line cooks and ensures performance standards during service
  • portions, cuts, slices, dips, batters, breads, whips, beats, maintains holding temperature, fries and sautés
  • selects cuts of meat, poultry, shellfish, fish, game or vegetables to be used for frying or sautéing
  • plates menu items along with appropriate garnish
  • follows recipes and complies with portion sizes, quality standards, department rules and procedures, and Department of Health regulations
  • performs other duties as required or assigned
