Job Qualifications

  • High school degree or equivalent
  • Three years of cook experience in a similar environment
  • Culinary education degree preferred
  • One year experience in lead line cook, supervisor or leadership role
  • Knowledge of sanitation and food safety standards
  • Ability to use Point of Sale and Kitchen Display Systems
  • Experience in hotel or resort kitchen environment preferred
  • Strong teamwork and communication skills
  • Positive and enthusiastic approach

Job Duties

  • Report to the Sous Chef to help prepare and present all foods in the restaurants and banquets
  • Maintain and follow all department operating procedures including daily temperature logs, cleaning logs, line check sheets and food waste sheets
  • Oversee activities of kitchen staff and monitor food production and presentation
  • Resolve operational issues
  • Manage daily prep, restocking of workstations, meal breaks and end of shift cleaning duties while maintaining positive operational flow
  • Maintain working rapport with all hotel staff for efficient operation and guest service
  • Assist all restaurants including quick service during peak business levels
  • Prepare all food items per recipe guidelines, tasting and adjusting for flavor with chef's assistance
  • Monitor supply levels of food, paper goods and small wares and oversee replenishment
  • Assist with audit of food storeroom items using FIFO and ensure compliance with health code
  • Maintain supplies and food readiness by inventorying stock and requisitioning as necessary
  • Maintain a safe, secure and healthy work environment by cleaning and segregating garbage, following sanitation standards and complying with legal regulations
  • Follow all Ecosure or similar food safety and sanitation program standards
  • Direct dishwashers to maintain clean and sanitary dishware
  • Maintain cleaning schedules on equipment and perform preventive maintenance and repairs
  • Assist and support operation at request of Sous Chef or Executive Chef
  • Prepare schedules for Executive Chef approval
  • Prepare and communicate closing reports and shift information to F&B operations team at shift end
