The Lead Cook position at Delaware North Sportservice provides an exciting leadership opportunity within a dynamic kitchen environment at Comerica Park. As a Lead Cook, you will be a critical part of the culinary team, responsible for delivering high-quality food while managing kitchen operations effectively. Your role will involve planning menus in collaboration with management, ensuring compliance with food safety and sanitation standards, and overseeing the preparation and presentation of all food items. You will lead and train kitchen staff, operate various kitchen equipment, and maintain a clean and organized work environment. Job Requirements

  • Must be able to lift up to 35 lbs to and from freezers and ovens, reach up to seven feet, twist, bend, and squat
  • Ability to stand and walk for the entire length of shift in moderate to high noise levels
  • Manual ability to chop, mix, blend, whip a variety of foods and liquids and operate kitchen equipment
  • Willingness to work evenings, weekends, and events
  • Ability to work in variable temperature environments

Job Qualifications

  • At least 2 years of previous experience in a back-of-the-house food-service position
  • Ability to read and comprehend prep sheets and recipes
  • Basic math skills, with the ability to calculate and follow recipe measurements
  • Strong leadership and communication skills
  • Knowledge of health codes and sanitation regulations

Job Duties

  • Review menus and customer orders to determine type and quantities of food to be prepared and comply with all portion sizes, quality standards, department rules, policies, and procedures, ensuring proper food temperatures are maintained, food is stored correctly, the freshness and quality of all menu items are upheld, and package all products to proper specifications
  • Keep workstation, coolers, and equipment clean, organized, sanitized, and sufficiently stocked, as well as maintaining the kitchen and storage facilities in a sanitary condition
  • Use waste control guidelines and record all waste on the spoilage sheet
  • Perform opening, closing, and side work duties and end-of-day inventory in accordance with guidelines
  • Train kitchen team members and provide leadership to ensure smooth kitchen operations
  • Operate kitchen equipment safely and efficiently
  • Monitor labor, quantities, and overhead costs to maintain budgetary requirements
