The Lead Cook position plays a vital role within our food and beverage department, working directly under the Executive Chef to enhance kitchen operations, assist in menu planning, and coordinate effective food preparation and service processes. This role is designed for an individual who can lead by example, maintain composure under pressure, and drive kitchen staff to consistently deliver high-quality meals. Working a schedule that includes Sunday and Monday from 11:30 AM to 8 PM, along with three additional days during peak dining service hours (approximately 3:30 PM to 7:30 PM), the Lead Cook is essential in managing the kitchen’s day-to-day activities and ensuring smooth execution from food receiving to plating.
In this role, the Lead Cook will supervise all kitchen personnel, ensuring adherence to safety and sanitation regulations while fostering a collaborative and positive working environment. Responsibilities extend to the proper receipt and storage of deliveries, maintaining food standards in preparation, portioning, and presentation, as well as assisting in the setup, service, and cleanup phases of food production. The Lead Cook also plays an active role in training efforts focused on foodservice equipment safety and maintaining an efficient communication flow between kitchen staff and other departments.
Crucially, the Lead Cook will periodically evaluate food services by monitoring food quality, quantity, temperature, and appearance, then use this data to recommend improvements in operations and procedures. Job Requirements
- High school diploma
- Minimum of three years restaurant, senior living, or equivalent cooking experience
- Must hold current state-required sanitation certification or license
- Ability to maintain composure and utilize staff effectively under pressure
- Strong communication skills
- Knowledge of health and safety regulations
- Willingness to work scheduled hours including weekends and peak dining times
- Ability to adapt to changing environment
- Must handle foodservice equipment safely
- Ability to lift and carry up to 50 lbs with assistance
- Ability to work with kitchen equipment such as mixers, ovens, grills, and slicers
- Must maintain confidentiality
- Willingness to attend training sessions
Job Qualifications
- Ability to speak, read, and comprehend the English language
- Knowledge of menu presentation, food preparation, production, and food delivery systems
- Familiarity with local Health Department, OSHA, and other culinary regulatory agencies
- Good oral and written communication skills
- Strong inter-department communication and teamwork abilities
- Knowledge of food preparation and line production communication
- Willingness to be available for community emergencies
- Proficiency with Microsoft Office Suite
- High school diploma
- Culinary degree preferred
- Minimum of three years restaurant, senior living, or equivalent cooking experience
- Current state-required sanitation certification or license (Safe Food Handling and/or Certified Food Manager)
Job Duties
- Maintain a level head under pressure and utilize staff to deliver quality food consistently
- Assign specific duties to all kitchen team members for efficient kitchen operation
- Ensure deliveries are received, dated, rotated, and stored properly
- Supervise kitchen team members to uphold sanitation and safety standards
- Ensure proper preparation, portioning, and serving of food according to standardized recipes
- Assist with setup, service, and cleanup of food production
- Communicate with other departments and staff to ensure successful daily service execution
- Evaluate food service quality, quantity, temperature, and appearance regularly
- Represent the community warmly to create a positive marketing environment
- Support a culture that drives top-line revenue and occupancy through business decisions and employee engagement
- Adapt to a constantly changing environment
- Attend in-service training workshops as requested by management
- Maintain confidentiality of resident and community information
- Perform incidental housekeeping and maintenance tasks to maintain a safe and pleasant environment
